How chef terada breaks down his chicken is different from how everyone else does it and I honestly think that this way is the best, neve seen it done this way before and this makes everything so simple and much better

Hiro is such a good teacher. Even though he’s not teaching in his native language, he’s able to explain everything in good detail and highlights important points/neat tips. Also, big thanks to the cameraman for all the behind the scenes work. You guys seem like good friends & would be some fun drinking buddies lol

It's great to see a restaurant talk about an ever evolving menu. It seems to be the case that most restaurants seem to believe that a menu is a static thing that can only be added to and end up with an outrageously huge menu that none of the items on it get the attention they deserve. Great job NOVE! As always great work; keep it up!

**French Chef trigger warning!!!** Hiro just showed an awesome way to simplify deboning a chicken. For some reason, deboning a chicken always scared people in culinary school. With this technique it seems you get a similar amount of meat with about a tenth of the amount of time. This dude is great.
