I made this cheesecake and it was PERFECT! I was worried it would be very sweet, but it was so well balanced! Huge hit for Easter, everyone had seconds (some even had thirds!) and I'll be making another one for my work. Best cheesecake I've ever eaten! I followed a suggestion down in the comments to add the pan and water into the oven during preheating and it worked perfectly without wasting any energy on heating the water separately, and without risk of burns.

Amaaaazing! I did increase the caramel pecan layer as i thought it might not be enough and I was right. Upped it 50% and it was just enough.

My mom and I used to live in Lincoln Nebraska in the 1980’s and there was a take away place that did Turtle Cheesecake. I thought it was unique to that business as I’d not seen it before or since. It was gorgeous. Then I happened upon this video and I very nearly cried! I need to make this NOW to bring back the memory of those days when I had my lovely mother for company. This is just amazing amazing. Who knew Turtle Cheesecake was a thing everywhere?!? I even know how it got it’s weird mama thanks to you, John. Now I live in beautiful scotland and we still have the problem of not being able to get block cream cheese. We’ve only got cream cheese spread. Can’t even get it from Amazon which is tragic. Anyway thank you dear John. 💕

I made this using a brownie bottom once cooled I put the caramel/pecan mixture. Then put on the remaining layers. Turned out beautifully!
