Foxy Folksy - The Modern Filipino Kitchen

Dinakdakan is a popular Ilokano dish and this recipe is made of pork jowls, ears, and liver simmered with spices then chopped and grilled until they are crispy in texture and smoky in flavor. It is traditionally served with pig brain turned into a pate but this version uses mixed in mayo-vinegar sauce.

INGREDIENTS:
500g pork cheeks/jowls
500g pork ears
250g pork liver
1 tablespoon salt
1 teaspoon peppercorn
3 pcs bay leaf
5 cloves garlic
1 thumb-sized ginger
2 large red onions
1 stalk green onions
2-3 Thai chillies
1/4 cup vinegar
1/2 cup mayonnaise
pepper

Dinakdakan traditionally uses pig's brain, making it more creamy... This is also tangier due to the calamansi/vinegar added...

I opted to use mayonnaise instead of pig's brain because of a very simple reason- availability. I wanted to make it as authentic as I could, but unfortunately, I was unable to find pig brains in meat shops in our area and I realized that the situation might be the same for a lot of folks, especially those living abroad. Plus, it's a great option for those who want to try it but is not keen on eating brains. :)

Yummy but not really authentic..this is the modern version..authentic dinakdakan uses the boiled brain, not mayonnaise, as binder. Malaki po diperensya ng lasa..nevertheless, masarap din nman ang mayo as binder..

The meat is not fresh. It's not advisable to eat imported frozen pigs face and liver.

Bad cooking, you don't cook liver the same as pork, and mayonnaise is not native Filipino.
