Dum Keema
Ingredients for Masala:
Roasted chickpeas 2 tbsp
Coriander seeds 1 tbsp
Poppy seeds 1 tsp
Cumin seeds 1 tbsp
Ingredients for Dum Keema:
Beef mince 1 kg
Yogurt 1 cup
Brown onion 1 cup
Red chili powder 1 tbsp
Prepared masala 2 tbsp
Red chili flakes 1 tbsp
Salt 1 tsp
Ginger garlic paste 1 tbsp
Oil 1/4 cup
Hot water 1 cup
Heated coal 1
Oil (for smoke) 1 tsp
Green coriander (chopped) as required
Ginger (julienne) as required
Directions for Masala Preparation:
1. In a grinder add roasted chickpeas, coriander seeds, poppy seeds, cumin seeds and grind it well into fine powder.
Directions for Dum Keema Preparation:
2. In a bowl add beef mince, yogurt, brown onion, red chili powder, prepared masala, red chili flakes, salt, ginger garlic paste and mix it well.
3. In a pan heat oil and add marinated mince. Cook for 2-3 mins. Add hot water and mix it well.
4. Cover and cook until fully done. Turn off the flame, place heated coal on aluminum in the center of the pot and drizzle oil on it. Cover and smoke for 1-2 mins.
5. Your Dum Keema is ready. Garnish with green coriander, ginger and serve.
