Delicious Lemon Blueberry Pound Cake With Homemade Cream Cheese Icing

For the Lemon Blueberry Pound Cake:
1 and 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup plain yogurt or sour cream
1 tablespoon lemon zest (from about 2 lemons)
1 tablespoon lemon juice
1 cup fresh blueberries (or frozen, thawed and drained)
For the Cream Cheese Icing:
4 ounces cream cheese, softened
1/4 cup unsalted butter, softened
1 and 1/2 cups powdered sugar
1 teaspoon vanilla extract
Instructions:
For the Lemon Blueberry Pound Cake:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, until well combined.
Mix in the plain yogurt (or sour cream), lemon zest, and lemon juice until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the blueberries with a spatula, being careful not to overmix.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Remove the pound cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
For the Cream Cheese Icing:
In a mixing bowl, beat together the softened cream cheese and butter until smooth.
Gradually add the powdered sugar and vanilla extract, beating until creamy and well combined.
Once the pound cake has cooled completely, spread the cream cheese icing over the top of the cake.
