Today we will prepare a simple and delicious spread for zucchini bread. It can probably be stored in the refrigerator for several days, but we haven’t succeeded yet, it goes away immediately. Try it!

Ingredients:
0.5 kg zucchini
1 large onion
1 medium carrot
1 small bunch of parsley or dill
2 processed cheese (2*75 g)
2 tbsp. l. vegetable oil
salt
pepper
Preparation:
1. Cut the onion and zucchini into cubes, grate the carrots on a coarse grater. Fry the onion in vegetable oil for 1 minute. Add carrots and cook for another 4 minutes.
2. Then add the zucchini, salt and simmer under the lid for 10 minutes, stirring occasionally. Remove the lid and cook for another 5 minutes. Let it cool a little.
3. Meanwhile, chop the parsley and cut the processed cheese into small pieces. I put the parsley and cheese into a blender bowl and add the slightly cooled zucchini.
4. Beat until pureed. Salt and pepper to taste.
5. Let it sit in the refrigerator for about 20 minutes and the wonderful spread on bread is ready. Or you can eat it like caviar. It can probably be stored in the refrigerator for several days, but we haven’t succeeded yet. Try it!
