In this Tormek Sharpening Class episode we will take a look at our new knife jigs, KJ-45 Centering Knife Jig and KJ-140 Wide Centering Knife Jig. They have been developed to take precision knife sharpening yet another step further.
With Tormek's patented KJ-45 Centering Knife Jig, you'll get symmetrical bevels with the same angle on both sides of the knife, regardless of the thickness or geometry of the blade. Whether you're sharpening a regular kitchen knife or a thicker, tapered hunting knife, you'll get the same results on both bevels of the knife without needing to reset the jig. The KJ-45 Centering Knife Jig fits most types of knives: household knives, chef's knives, craft knives and knives for hunting and fishing. It also works for the woodcarver's straight drawknives and the gardener's pruning shears.
The longer clamp of the KJ-140 Wide Centering Knife Jig stabilizes flexible knife blades, such as filleting knives, to prevent them from bending. This gives you the same angle and pressure over the entire bevel.
Both new knife jigs work with Tormek T-4 and Tormek T-8, as well as older models with a Universal Support.

I have a T-8. I'm interested in the diamond wheels, but i have questions about particularly thin knives. I have a couple of Shun knives with very thin edges like 9 or 10 degrees. I have also been frustrated when attempting to sharpen shorter paring knives with a short distance from the back of the blade to the edge. Getting it perfectly centered in your small knife jig is nearly impossible, so I've resorted to a Lanksy setup for my pocket knives. However, Lanksy will not handle a less than 17 degree setting. I have also had challenges getting a grip I consider secure enough when clamping at a 2mm depth. I'm really glad you're doing theses videos.
@TormekSharpening
@TormekSharpening 2 жыл бұрын
Hej ladykay8, when you clamp the blade just 2mm, you have to tighten well, one of the other reasons could be that you apply too much pressure. I sharpen personally my pocket-knives free hand with tiny secondary bevel due the fact that the knives are already tapered from the back of the blade to the edge. The SVM-00 Small Knife Jig is centered when the blade is mounted perfectly alligned with the metal bar of the jig. When you have tapered blades (all the blade from back to the edge) it's a bit tricky, you have to compensate the tapered angel or you have to adjust both sides to your desired angel. The most common problem is the construction of the knife itself, that the blade isn't symmetrical or the blade isn't symmetrical mounted in the handle. Here some instpiration ;-) instagram.com/p/CQOmJvGLBRQ/ I hope I could answer in some way your question /Wolfgang

For those who are interested: I bought this jig recently and have used it to sharpen several knives. It does a very nice job of centering on thin knives with minimal to no taper. No complaints there. However, all of my EDC knives have a full flat grind, so they taper from spine to edge as well as from handle to tip. I find it impossible to get full contact between the jig and the sides of the blade, as this would require the side of the jig twist in two different axes. This jig is definitely an improvement, but it is annoying that Tormek does not offer a solution for securely clamping this very common blade shape. That is, unless I am missing something.

Hi there, For more accute tapers, you might need to loosen the front screw quite a bit for the jaws to be able to close around the blade. Hope that makes sense. If not, please send an email to support@tormek.se and we'll help you out. Stay sharp! /Hugo from Tormek

What understand it is not longer possible to adjust the length between the edge of the knife and the hold which means that you have to adjust the bar every time instead of always have a specific length which I do - 140 mm. Now you have to recalculate every time to get the bar at right hight.
@TormekSharpening
@TormekSharpening 2 жыл бұрын
Hej Tomas, right, the advantage is that the precision increases due the fact that the knob can change during sharpening, especially when you have more rounded tips. The adjustment with the Universal-Support is much more precise and you develop a muscle memory (when holding the jig) with the time and you handling is getting more secure and again the sharpening more precise. I´ve personally never have adjusted the knob because its also faster to adjust the Universal-Support. I hope I could answer your question. /Wolfgang

Is this really fully self centering? No more paper/tape filling for blades thinner than 2,2 - 2,5mm? What about knives with 3 - 6mm thickness for example? What are your experiences people, please? I am strongly considering buying this thing. Thanks in advance for answers.
@TormekSharpening

Yes, it really is self centering! 🤩 It centers knife blades up to 10 mm thick and up to 6 mm for tapered knife blades. We love it a lot and hope you will too. Stay sharp!

Fantastic. So this fixes the self centring issue with the jig. But what about fixing the off-centre issue with the small knife jig and small knives like pen knives? Not an issue for me, but maybe an issue for others?
@TormekSharpening
@TormekSharpening 7 ай бұрын
Hej Richard, due the fact the small knives have to be clamped in the SVM-00 Small Knife Holder and the handles mostly aren't symmetrical or can't clamped symmetrical you have to adjust bot sides. There are naturally some limitations that a jig can't solve except they are very complex. //Wolfgang

Maybe I can get a tip here: I have the knife holder (the small one), and am sharpening 25-30cm kitchen knives in a T8. When I slide the knife left/right on the stone, then *sometimes the knife tilts, and with that I sharpen on the edge of the stone and immediately have a nick in the middle of my blade somewhere.* Sure this must be user error, I must hold the knife wrong somehow...?
@TormekSharpening
@TormekSharpening 27 күн бұрын
Hej yxcvmk, when you round off the edges with the Stonegrader SP-650 the risk is minimised. Another tip is to hold the knife not cramped, just comfortable and lose, to have better the contact feeling and the feedback. Last but not least hold the blade straight and don't go to deep.

That’s pretty, cool, but you know what’s cooler? The guide they have for the single purpose T2 knife sharpener: just set the guide to the correct angle and stick a knife in and go to work. No need to do all that setup for each knife. Seems like they ought to make something like that for this. All that messing around for each knife and I’m just going freehand.

Original knife jigs were a faulty design from the start. Two different bevels were the result. How sad that we are forced to pay again for a correctly designed jig. Also sad how long it took Tormek to finally realize this and/or fix the issue.

@@yo_stephen In my opinion, in terms of geometry the SVM-45 never put on a consistent angle on both sides. For the amount Tormek charges for their machines I would expect better. After all, they came out with a new knife jig. If nothing was broken why fix it? Why improve it? "Worked" is a relative term. Perfection....not so much. They should offer a send us your old jig and receive a discount on the new one deal at minimum.
@dp1381
@dp1381 9 ай бұрын
The original job worked fine and it was possible to get symmetrical bevels if you made the small effort or resetting your angle when you start grinding the second wide. The new jig is a convenience. If you don’t want to pay for it, no one is twisting your arm. Be grateful Tormek designed and produces this awesome system at all.
