I've never tried a vegan version but if I were to substitute the 1 egg, I would try 3 Tbsp. of aquafaba (the liquid from canned chickpeas / garbanzo beans). I usually have some on hand as chickpeas are my "tuna" substitute. I hope this helps and thanks for watching.

Good question! The initial frying of the patties is to hold them together. The broth is to swell the oatmeal, add the flavoring from the broth (depending on what your making - sausage, burgers, chicken...) and makes it a softer texture. Just frying it longer would miss the flavor and leave the patties as more of a hard hockey puck instead of a sausage texture. Egg is not vegan but is lacto ovo vegetarian. I’ve been so for 35+ years. We all have our individual reasons for not eating meat but mine does not include eggs or dairy. Thanks for your comment.
