BANH CHUNG / VIETNAMESE RICE CAKE FOR LUNAR NEW YEAR
1. BANANA LEAVES: Prepare your banana leaves according to the video. Note: wipe your banana leaves clean. If you wasn’t them, they will tear- they are fragile
2. PORK: Cut pork into large chunks. Season your pork with salt and pepper to taste. Combine well and set aside.
3. MUNG BEAN: Soak your mung bean in water for at least 3 hours.
- After your mung bean has been soaking for 3 hours, drain your mung beans of the water.
- Then rinse under cold water until the water runs clear.
- After you’ve washed your mung beans, you need to cook it. Cook mung bean with water and salt to taste.. You need JUST enough water to coat mung beans. Note: for me, i had 4 lbs mung beans + 5 cups water + 1 TBSP salt. I diluted 1 TBSP of salt into the water before adding it into my mung beans.
- Bring this to a boil, reduce heat, cover and cook for 10 mins.
- After 10 mins, turn off heat, give it a nice mix, place lid back on and let it sit for 10-15 mins. After 10-15 mins, season with black pepper. Combine well. At this point, your mung bean will crumble. Set this aside
4. SWEET RICE: soak sweet rice in water for at least 5 hours.
- after your ride has been soaking, drain it.
- Then rinse under cold water until the water runs clear. Season this with just salt.
5. Once you have your banana leaves, pork, mung bean and sweet rice prepared, you’re ready to wrap. Wrap your bánh chưng according to the video. I used food safe nylon to tie my banh chung/ rice cakes.
6. I’ll show you how to cook it in part 2.

Its heartwarming to see this video not only for us, but also for her children and grandchildren to look back on how to make an important traditional dish that connects family together in Tet holiday.

My thoughts exactly. As much as I dislike technology sometimes, I actually think it has the ability to preserve cultures and stories that previously had to be passed down orally

This is such a labor of love. I am Cambodian and we make this as well. One year, I woke up at 2am to help my mother in law make a huge batch of these but different varieties (pork, banana, and coconut+mung beans). It was for the temple celebrating our version of day of the dead. My MIL expected me to go and get blessed but girl, I done went back to bed after 10 hours of this. Sleep was my blessing 😂

Thank you for sharing these recipes. I always wanted to learn how to make Vietnamese food from my mom, but she passed away before we had the chance to really reconcile. Vietnamese food always reminds me of her and the way food was how she showed her love for her family. Thank you, always.

My family is from Hong Kong we have something similar called Zongzi made up of glutinous rice, mung beans, and we enjoyed meat, pork, chinese sausage and egg yolk fillings, wrapped in bamboo leaves in a cone shape. My grandmother is the one that always make it and over the years me and my siblings start to learn how to make it.

There is two different versions (at least from what I know of) - bánh chưng and bánh Tết. Bánh chưng is square and more eaten in the North of Vietnam and bánh Tết is cylindrical and more common in Central and Southern Vietnam. Same ingredients, just different name and shape.

Dang. That's some work. Are the banana leaves reusable? Or is it a one and done?

It's pretty much one and done, but they're biodegradable since the wrap is made of plant.

@@lisamckay5058 this year the banana leaves's price went higher, idk the reasons honestly, so u should expect those might go even double the price when they're exported overseas

Hi they young lady, I don't suppose you have a fool proof way of making rice noodles, the ones that you do like crepes but then can slice however thick or thin you want. I tried to make some for a Pho I made the other day and I failed.
