Vegetable oils are a hot topic in the wellness world. Some believe they’re a heart-healthy alternative to saturated fats, while others claim their impact is far worse for our overall health than we initially thought. If you’re confused about seed oils, this episode is for you.
Today on The Dhru Purohit Podcast, Dhru sits down with Jeff Nobbs to discuss the top seed oils consumed today and why they are so problematic for cardiometabolic health. Jeff maps out the history of seed oils and how they’ve become ubiquitous in restaurants and ultra-processed foods. He also describes the research limitations and selective reporting that have heavily influenced their recommendation and use.
Jeff Nobbs is the cofounder and CEO of Zero Acre Farms, a food company replacing destructive vegetable oils with a healthier, more sustainable option. With over 15 years of experience in health and nutrition, Jeff has cofounded several start-ups to offer better-quality ingredients and nutrition-forward foods to people and communities, including the fast-casual restaurant chain Kitava. Jeff also cofounded HelpKitchen to connect food-insecure individuals with restaurants and has served as the COO for Perfect Keto and GM of Ebates (formerly Rakuten), a cash-back and shopping rewards company.
In this episode, Dhru and Jeff dive into:
-Why seed oils aren’t as good for us as we initially thought
-The impact of seed oils on the body
-How to test your omega-6 blood levels
-The history of seed oils and how they’ve become so pervasive
-Why trans fats were “banned” from commercial production
-Observational research and the argument for seed oils
-Randomized controlled trials and the argument against seed oils
-Dhru’s personal experience with seed oils and growing up vegetarian
-Jeff’s story and how he became involved with seed oils
-The top seed oils consumed in restaurants and ultra-processed foods
-The downsides of fear-mongering seed oils in mainstream media
-The adulteration of olive oil and avocado oil and why it’s a problem
-Jeff’s thoughts on high-oleic oil
-About Zero Acre Farms’ mission and their cultured oil’s flavor, calorie -density, and environmental impact
-The top dietary principles Jeff follows to keep himself healthy
-The top lifestyle principles Jeff follows to keep himself healthy

There is a quick way to "test" if an oil is olive or not: Put it in the fridge overnight. If it is a soft solid, it's probably olive. If it's still liquid, it's definitely a seed oil. Olive oil is solid at fridge temp. Seed oils are still liquid.

I've solved this problem easy. No oils, period! For example, instead of using salad dressing, I use a mixture of sodium, garlic powder, pepper and organic lemon juice and then smother my salad with avocado for those healthy fats and flavor. I swear it's delicious. The more accustomed you are to real food, the more that highly processed protein bar tastes like cardboard.

I am 80. In very good health, take no medications, walk a big dog 3 times a day. I am old school, still have the 'fat tin', as my grandmother did and all fat drippings go in for future roasting, frying, braising etc. IF I want chips, I cook them in lard, and I use a lot of butter and cream in my food. When asked why I don't use oil I say, 'take 1 sunflower seed, peel it, squeeze it and keep the oil, now continue until you have a cup. Can you do it? No? Then you can't eat it. Nature was not stupid, if we were meant to eat it it would have been readily available. If oil is harmless then why be horrified when I suggest putting it in your car. It will damage the engine but it is ok to put it into your precious body.?

I remember when the Canadian government banned the use of animal fat ( lard) in restaurants and fast food outlets and they all went to vegetable and seed oils. We all bought into the idea that it was healthy. At first the taste was not as good but we became accustomed to it. A few years later we were travelling in the US and stopped at a KFC and we noticed that the chicken tasted like it used to taste in Canada. I still use lard in my pastry..never liked Crisco. For the past 20 years all we use is evoo and avocado oil. Margarine is no and butter is yes. Preferrably butter from organic grass fed cows .

When you fast, you first burn off and get rid of the damaging lineolic acid. After a while fasting, you will burn saturated fats like stearic acid. This releases succinate in the body which increases mitochondrial growth and increases your metabolism! Some benefits of doing occasional extended fasting: High blood pressure is lowered to normal levels very quickly while fasting. Fasting restores NAD+ to healthy levels. Vitamin D plasma levels are increased as fasting improves metabolic health, and vitamin D in turn increases autophagy. Fasting stimulates phagocytosis, the ingestion of bacteria, plaques and viruses by the immune system. It will also remove any 'foreign material' like spikes that are not supposed to be there. Whether natural or unnatural in origin.. Fibrosis/scarring is reversed over time. Fasting increases nitric oxide release. Telomeres are lengthened and fasting also increases anti-aging Yamanaka factors. Blood clotting is reduced and blood clots and arterial plaque are reabsorbed into the body. Fasts from 36-96 h increase metabolic rate due to norepinephrine release! After 72 hours or more fasted, your body recycles up to 1/3 of all immune bodies, rejuvenating your entire immune system. This helps prevent the onset of new autoimmune conditions, which develop through a leaky gut and damaged immune system. Fasting can help with MS, Depression, BPD, Autism and seizures. Thymus is regenerated, which suppresses aging and renews the immune system. The thymus also plays a vital role in fighting cancer. Blood sugar and insulin are lowered when fasting, allowing white blood cells to move more freely throughout the body and do their job. Weight loss from daily caloric restriction has 1/4 to 1/3 of the weight lost as lean tissue while many studies show fat loss from 36 h fasts without losing any lean tissue! The obese will lose extra tissue like loose skin while fasting, but the skinny or frail will have increased growth hormone release than the obese, which helps to make more lean tissue and reduce frailness. The hunger hormone ghrelin also lowers with extended fasting and rises from dieting. When you move out of MTOR your body shuts down the building blocks of the cell required for viruses to replicate. What breaks a fast? Anything with protein or carbohydrates in it will break a fast. Most teas and herbs are OK. Most supplements and meds will either break ketosis directly or contain a filler that will. Many meds are dangerous to take while fasting. Does fasting lower testosterone? No, it raises it when the fast is broken by increasing lutenizing hormone. Fasting also increases insulin sensitivity, which helps with muscle building. Fasts of 36-96 will not affect short term female fertility or affect menstrual cycle. They also may increase long term fertility, especially in women with PCOS. Fasting reduces pain and anxiety by stimulating the endocannabinoid system in a similar way to CBD oil. Fasting very quickly reduces leptin resistance, which impairs immune function. One day of fasting can cut your leptin levels in half and gets your immune system working properly again! Stomach acid is reduced over time while fasting and can allow for the healing of treatment resistant ulcers. Some patients may need continued acid reduction medication while fasting. Does the body preferentially prefer glucose as a fuel? No. Except for brief periods of very intense exercise, your body mainly burns fats in the form of free fatty acids. Your brain also prefers to burn ketones at a rate of around 2.5 to 1 when they are available in equal quantity to glucose. Fasting stimulates the AMPK complex and activates autophagy. Autophagy (literally self eating) will cause cells to recycle foreign matter such as viruses and kill cancerous and senescent cells Lowering insulin via fasting virtually eliminates chronic inflammation in the body. It increases mitochondrial function and repairs mitichondrial DNA, leading to improved ATP production and oxygen efficiency. Increased mitochondrial function also has the added benefit of increasing your metabolism, fighting infection and cancer prevention! Fasting releases BDNF and NGF in the blood which stimulates new nerve and brain cell growth. This can help a great deal with diseases like MS, peripheral neuropathy and Alzheimers. When not in ketosis, the brain can only burn carbohydrate, which produces a great deal of damaging ROS the brain has to deal with. Fasting also increases telomere length, negating some of the effects of aging at a cellular level. When you fast, this stimulates apoptosis in senescent or genetically damaged cells, destroying them. Senescent cells are responsible for many of the effects of aging and are a root cause of the development of cancer. A fasting mimicking diet for 3-5 days in a row also provides many of the same benefits as water fasting. Exogenous ketones can aid with fasting, making it easier in healthy people and allowing some people with specific issues to fast in spite of them without worrying as much about hypoglycemia. Children, pregnant or nursing women should not fast for periods longer than 16 hours. People with pancreatic tumors or certain forms of hypoglycemia generally cannot fast at all. Type 1 diabetics can also fast but it is more complicated and should be approached with caution as it could lead to ketoacidosis. If you experience extreme symptoms of some kind, especially dizziness or tremors, then simply break the fast and seek advice. A while fasting?... what do you mean?... after you have burned off most of the linoleic acid, like a couple of years? What about the half life of LA in the body, 2 years? I thought it was just a waiting game to bring levels down once you eliminate them from your diet. I also wonder if one will feel like crap fasting if they are full of LA.

@@campbellpaul Thank you for the courteous response, I really appreciate it. I'm going to copy a response I made to someone else, they were saying that they trust him and are going to purchase his product because he is healthy looking and credible. This is what I said (with some edits) Respectfully, you are in the wrong and have not thought this through. I know people aren't often persuaded when they are told bluntly that they are wrong but I think in this situation it is necessary. Your basis for trusting him is the fact that he looks healthy and has succeeded in a business endeavor?Please reconsider. If that's all it takes for you to ingest an unproven substance, the fact that the person standing to benefit financially tells you that it's okay and they look healthy, that does not bode well. Jeff is in his 30s, if he eats a moderately decent diet, exercises and gets good sleep of course he'll look healthy. He saw an opportunity in the marketplace. I'll concede that he is genuinely concerned about processed vegetable and seed oils but his answer was not to use his influence and business to encourage people to eat real food. His solution was to manufacture another frankenfood, another ultra processed product and offer it in the stead of existing processed products. Why are you okay with that? Of course, we live in a capitalistic society with hardly any checks and balances, people like him want to make a lot of money in order to gain tremendous influence and power. All of that mitigates against trust not for trust. The CEO of a corporation that manufactures a product is not a trustworthy source of information. He wants you to buy his product. He wants your money for his product. The fact that he is charming and healthy in appearance and affect should not influence your decision. It is proven that real food is healthy for us to eat. Not animals that are raised in CAFOs, not eggs from chickens living in crowded factory farms, but food from animals that are raised in natural conditions. Pasture raised eggs, dairy from grass-fed cows, and meat from grass-fed animals. On the topic of Omega-3 versus omega-6, meat from pasture raised animals is much higher in Omega-3. When they are grain-fed the meat has no omega-3 and instead has omega-6. Why would I purchase and ingest a laboratory created oil when I can eat real food? Avocados are a source of healthy fat, you don't have to use avocado oil you can eat an avocado. Wild caught salmon. Animal fats from animals that are raised in a healthy and sustainable manner. Seasonal fruits and vegetables for those who enjoy them. I'm not going to enter the discussion on carnivore because that's a separate topic and I don't have a lot to contribute other than carnivore works for some people and eating seasonal fruits and vegetables works well for others. I've spent more time than I probably should have responding, I hope you are able to take it to heart and reconsider your position. --- I really did spend too much time! But I feel a sense of responsibility. If we can persuade one person to avoid something dangerous, maybe we helped save a life, maybe we influenced someone in a way that benefits them.

Roasting nuts uses additional oil on the nuts during roasting. The oil is highly processed and sits in storage causing degradation of the product. Then heated again during roasting. On the label you will see what kind of oil was used hopefully on peanuts frequently it’s Peanut Oil. Other nuts it seems Sunflower Oil, Safflower Oil, Canola Oil, and Almond Oil, and Palm Olein Oil that is derived from the kernel of the Palm it is ultra high processed as apposed to the oil from cold pressing the palms fruity part which has a high Monounsaturated oil and low Polyunsaturated. Palm Olein is used in deep fried Plantain Chips from Trader Joe’s for instance. People here that Palm oil has a good Profile and think that Palm Olein is a “good” oil.

Great podcast! One key takeaway I got from your explanation is how the introduction of seed oils into our diets was driven by historical factors and not necessarily based on their health benefits. It's fascinating to see how these oils have become so prevalent in our food industry. Btw, I'm curious, given this extensive history, what do you believe can be done at a societal level to raise awareness about the potential risks associated with seed oils and to promote healthier alternatives in our diets?

Many people believe that olive oil and avocado oils are good to cook. But when we heat them, they are as bad as any other vegetable oil . Olive oil should not be heated or added to salad to refrigerate, it gets to be in a a type of pastiches lard. I d not really remember the term but it solidifies and became a bad grease. The extra virgen olive oil should be put just before eating, not heated or cooled. In other words we like the taste of French fries, but they should never be fried. We should never eat anything fried in oil. Inherited bad customs, makes us victims of error.

We should investigate everything in this day and age, things are so weird and upside-down. We just need to get it right side up to be in good health. As far as prosperity goes that's another subject that we better get turned right side up to. I feel like my own government is at war with its own people. On top of that we are paying the bill for our own destruction!

It doesn't matter that he looks healthy, that's a terrible reason to trust someone or to consider purchasing a product. He's right that highly processed vegetable and seed oils are very unhealthy for a variety of reasons. His solution though? His solution is to manufacture another franken food, he calls it cultured oil and he claims that it is much healthier than any other processed vegetable oil that comes in a bottle! Maybe but why would anyone replace real food with another laboratory manufactured pseudo food? Eat real food. Don't eat foods that are manufactured in laboratories. There are great sources of fat there that have been proven healthy such as butter, ghee, olive oil and avocado oil in moderation assuming you have access to an unadulterated source, animal fats from animals that are pasture raised. Eat those sources of fat and leave the bottled oils behind including this newest entry that Jeff is hoping to become very rich from selling.

@Kyarrix
@Kyarrix 11 ай бұрын
@@glenmorse9533 Respectfully, Glen, you are in the wrong and have not thought this through. I know people aren't often persuaded when they are told bluntly that they are wrong but I think in this situation it is necessary. Your basis for trusting him is the fact that he looks healthy and has succeeded in a business endeavor? Please reconsider. Jeff saw an opportunity in the marketplace.

Take what Jeff says with a grain of salt. He is absolutely right about seed and grain oils being unhealthy and pro-inflammatory. But, and this is the important caveat, he is here to sell his product. His company manufactures a replacement for those oils. They call it cultured oil and their claim is that it is much healthier. He is offering his laboratory manufactured replacement for pro-inflammatory hexane processed vegetable and seed oils but there is no need for a replacement oil. We should not be ingesting processed oils in the first place other than in extreme moderation. Use butter, ghee, avocado and olive oil in moderation if you can get good products and animal fat from pasture raised animals where possible. We don't need a replacement vegetable oil, what we need is to eat real food, not laboratory created pseudo products that are allegedly better for us. In 50 years we'll know whether his product is okay to eat or not but don't be the guinea pigs. It doesn't matter much if his product ends up being less harmful. It isn't going to be better or healthier than real food. Eat real food, use healthy sources of fat and leave the frankenfoods behind.

I wonder why peanut oil is on that list. When you make peanuts into peanut butter, the oil separates a bit...that isn't highly processed. Please reconsider using his product. Don't be the guinea pig for something that is not proven safe and healthy. Make mayonnaise out of olive oil and pasture raised egg yolks. A little bit of olive oil if you can get good quality olive oil that isn't adulterated is better than using something that was created in a laboratory. Olives are real food. If you take them and smash them you get oil. Cultured oil, the product that Jeff is seeking to become very rich from selling, is not a natural food it is a processed food. He's right about the dangers of processed seed, grain and vegetable oils. They are generally extracted with hexane, they are pro-inflammatory and they become rancid very quickly. There are many good reasons to stay away from those oils. There is not however a good reason to manufacture a replacement in a laboratory. There are real food good quality alternatives. Please don't enrich someone at risk to yourself. In 50 years or so if it's proven that this substance is generally safe, maybe but even then I would prefer real food.

Commercial bottled baby food is absolutely horrible. You can use just about any fresh food to make baby food, IF it's chopped fine enough. Kids in the US don't have a palate for vegetables. If you introduce vegetables to young babies, they will eat them as they grow up. Cook peas, cool them, and chop them up in a blender. Poor the peas in empty ice cube trays, and each cube is one baby serving. You can do this with any vegetable: Make the frozen cubes, bag them, and pull them individually for baby meals. The cubes thaw very easily. Just be careful heating them.

Animal fats I find are best because they’re body’s have already filtered bad things out The biggest detriment to my health is being put under anesthesia and undergoing surgery then coming out of the surgery to have sore muscles the following days from convulsions for such a long period of time that the lungs and heart are strained to irreversible repair!!!

I am wondering if pressing your own seed oil from organically grown healthy seeds, and consuming this cold-pressed, non-rancid, non-chemically extracted oil will have the same effect on our health. I wonder if part of the problem is how they extact the oil and how old it is by the time it gets to us, as well as some seeds used for oils are unheathy for us to begin with. Has anyone done health experiments with fresh pressed oils?
