INGREDIENTS:
For Moth
* Moth Bean(मोठ) - 1/2 Bowl
* Salt(नमक) - As per taste
* Water(पानी) - As required
* Ghee(घी)
* Asafoetida/Hing Powder(हिंग पाउडर)
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर)
* Coriander Powder(धनिया पाउडर) - 1 Tsp
* Red Chili Powder(लाल मिर्च पाउडर)
* Black Salt(काला नमक)
* Roasted Cumin Powder(भुना जीरा पाउडर)
* Garam Masala(गरम मसाला)
* Mango Powder(अमचूर पाउडर)
* Dried Fenugreek Leaves(कसूरी मेथी) - 1 Tbsp
* Water(पानी) - 2-3 Spoon
For Dough:
* Whit Flour/Maida(मैदा) - 1.5 Bowl
* Carom Seeds(अजवायन) - Some
* Salt(नमक) - As per taste
* Baking Powder(बेकिंग पाउडर) - 1/4 Tsp
* Oil(तेल) - 2 Spoon
* Water(पानी) - As required
For Serving:
* Sweet Chutney(मीठी चटनी)
* Green Chutney(हरी चटनी)
* Curd(दही)
* Onion(प्याज)
* Tomato(टमाटर)
* Lemon Slice(नींबू)
* Ginger(अदरक) - Some
* Coriander Leaves(धनिया पत्ती)
RECIPE:
Soak some Moth Bean for 4 hours. Then put the soaked Moth in the cooker, some Salt, Water in it. Give it 2-3 whistles and take it out in a bowl.
For Tadka, keep the pan on the flame, put some Ghee, Asafoetida/Hing Powder, Kashmiri Red Chili Powder, Coriander Powder, Red Chilli Powder, Black Salt, Roasted Cumin Powder, Garam Masala, Dried Mango Powder, Dried Fenugreek Leaves, some Water and cook it a while on a slow flame. Then put the tadka on the Moth Dal and mix it well.
For Dough, in a bowl, take some White Flour/Maida, crushed Carom Seeds, put Salt, Baking Powder, some Oil in it & mix them. Add Water gradually & bind the tight dough. Knead the dough very well. Cover it and leave it for some time. Then take a dough ball, apply some Maida on it and roll it. Then prick the Kachori with a Fork or with a knife and in this way, roll all the Kachoris. Then fry them in the medium heated Oil until they get golden in color.
For Serving, take a serving plate, put some Moth Dal, some Green Chutney, some Red Chutney, whisked Curd, then put the fried Kachoris on it. Then put some more Green & Red Chutney, whisked Curd & serve it with long chopped Onion, Tomato & Lemon Slice. Garnish with long chopped Ginger & Coriander Leaves. Serve it and enjoy it. In this way, Tasty Moth Kachori Chat will get ready at home easily.
