Dim'er Devil-Egg Devil-Calcutta Cabin Style Spicy Scotch Eggs-Kolkata Street Food-Durga Pujo Special

Dim'er Devil may sound like devilled eggs, but is in reality much closer to the Scotch egg or the Nargisi kofta. A basic dim'er devil has one or half an egg encased in a spicy wrapping. The outer wrapping is usually potato for egg devils sold in street-side stalls in Calcutta. In cabins or older dine in cafes/restaurants the egg is wrapped in minced meat cooked with spices. Finally, the whole thing is coated in breadcrumb or in a batter and deep-dried. Dim'er devil is served with kasundi, and a simple salad of onions, cucumbers and beetroots.
In this Durga-Pujo-special video we have chosen the more festive cabin-style dimer devil that is made with minced mutton. We have borrowed heavily from the Niranjanagar's devil recipe available on KZfaq on the Uttar Bangla channel (linked below).

I am not a Bengali.. I haven't tasted as many dishes from Bengal but this channel is so soothing.. it is like asmr for foodies.. PS the trick of using 2 hands for wet and dry ingredients.. I always face issues with that but this never came to me.. thank u guys .. keep up the yummy videos

The amount of effort you guys put in researching for the perfect recipe, then practicing it , I don't know how many times, before making the final video and the minute details you add for us to understand the dish better is beyond commendable. It is treat to watch every one of your videos. I have seen several cooking channels and chefs over the years, but it seems like you have cracked the code on how to make people invested in cooking or crave for the dishes you guys make.

The tips you leave on the videos are my absolute favorites, down to the sources you cite (The Art of Boiling Eggs. Who knew?!). Such little things, and so useful! I am an egg person, specifically, a boiled-egg person, and have had to endure many craggy boiled eggs before figuring out what works. To see content which is truly attentive to all aspects of a dish, even if it is a popular 'raasta'r khabar' is so heartwarming. Also love that you always provide a source for all this information. Yes! you can also use potato mashed with spices. Normally Dimer Chop (other version of dimer devil) is made with potato, instead of meat.
