As a Greek girl, I can vouch for these -- the best! And I love how you add cumin. We're usually purists (lemon + oil + oregano + salt + pepper), but I'm going to try this.

I am not Greek, but I eat this often. Thought I'd share that when I cook home fries on the stove or in the oven and like to add toasted cumin & mustard seed and sometimes a pinch of allspice or cinnamon...if it is on the stove I use a large wok and add smashed bits of cinnamon stick to the onions before tossing the potatoes back in. Yep! cumin is wonderful indeed earthy goodness!

My husband is Greek and loves when the potatoes are cooked in with the chicken. Do you ever do this and if so, do you just prepare them the exact same way and just add to the roasting pan with the chicken?

I use olive oil at that oven temp. I sometimes use avocado oil. I never use canola i really dislike the flavor it imparts to french fries and other deep fried items.

If I don’t put salt on the potatoes before putting them in the oven, they get crispy. After backing them i wait 5 minutes and then salt them.

i tried making these on the baking sheet. Normally i make them in a pyrex pan. I failed miserably making them on the baking sheet :(.. lol oh but i put foil on my baking sheet, maybe that's why?? omg the light just came on hahaha

i think it was the foil. And maybe they were a bit more dry than i'm used to?..who knows..i'll try again one day without the foil...i don't know what made me use the foil..lol..there i go experimenting again hahaha!!

lol! I've had many things like that and worse happen... You can bake them longer and add some more water if they were on the dry side. A cup of hot water added when they seem to be drying up will do the trick :) But, no foil :)

I know! I can definitely go crazy with olive oil most of the time!!! Can you tell how much I love it? lol You can absolutely put less. In that case, place the peeled and sliced potatoes in a large bowl and mix them well with the olive oil so that they get maximum coverage. Then continue to season them on the baking tray and roast. Does that make sense? I'd love to hear from you on how they turn out :) Thanks for sharing!

For a better presentation, actually cut the potatoes into WEDGES & don't slice 'em straight down. 2ndly...another tip...rinse the potatoes before preparing, and if you par boil them & let 'em rest for a bit to let the moisture escape you'll end up with more "crunch" on the outside. 3rdly, that is _waaaaaaaaaaaaaay_ more than 1/2 cup of both lemon juice, AND olive oil, just sayin'. 4thly, no need to reach in and sprinkle the potatoes...just dump all your seasoning on top which you ended up doing a/ways

_"Gonna need about 8 Russet potatoes"_ ? Unless you're preparing for a *LARGE* group, *EIGHT* would be *MORE* than enough. Generally you'd have other things/side dishes to eat in addition to the main course, so unless you're wanting leftovers, for "medium" size, I generally figure *ONE* per person, and if you're feeding *SIX* people, figure two more at *MOST* . You prepared *Waaaaaay* too many.

Love Greek style lemon potatoes BUT 450 degrees for olive oil ????? This is almost twice the limit . Instead use avocado or grape seed ,maybe canola .
