Now this is the power of Star Platinum. He always held back when beating the heck out of all the other guys, but even with Dios durable Vampire body he was punching holes through his whole body not holding back at all

Yea it's pretty clear jotaro holds back, when you know a single star platinum punch can send any enemy flying, the barrages are him just goofing around, we see in the possesed kakyoin fight that he can blow entire buildings

Dio was far from durable, because he took jonathan's body which was infused with hamon he was weakened, his vampiric powers and regeneration were nerfed, and that also nerfed his stand.
