Ingredients :
Rice - 1 Cup
Dal - ¼ Cup
Oil - 5 to 6 tbsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Chopped Garlic - 1 tbsp
Chopped Green Chilli - 1 tbsp
Curry leaves - 1 Strip
Chopped Onion - 1 Medium
Chopped Tomato - 1 Medium
Peanut - 2 tbsp
Red Chilli Powder - 1 tsp
Turmeric Powder - 1 tsp
Chopped Potato - ¼ Cup
Salt - as per taste
Chopped Coriander - 2 tbsp
Hot Water - 4 Cup
Method :
Rinse the rice and dal together under running water until the water runs clear. Drain and set aside.
Heat oil in a pressure cooker over medium heat. Once the oil is hot, add Chopped Garlic and Chopped Green Chilli Allow them to light Golden.
Add Cumin Seeds, Mustard Seeds, curry leaves, chopped Onion to the pressure cooker. Sauté for a minute until the turns golden brown and aromatic.
Add chopped tomatoes, peanut and chopped potatoes sauté until they turn soft and mushy.
Add red chili powder, Turmeric powder. Mix well to combine all the ingredients.
Add the rinsed rice and dal mixture to the pressure cooker. Stir well to coat the rice and dal with the spices.
Pour hot water and salt into the pressure cooker and stir gently to combine all the ingredients.
Close the pressure cooker with its lid and cook the khichdi over medium heat for about 3-4 whistles, or until the rice and dal are cooked and soft.
Once the pressure releases naturally, open the pressure cooker carefully.
Garnish the khichdi with chopped coriander leaves and serve hot with yogurt, pickle,papad,sabji or any side of your choice.
