Ingredients:
3 pounds chicken (hard/tough meat. Recommending “hen”)
1 heaping tablespoon of tomato paste
Salt
4 cloves of garlic
Chili ( use per your heat tolerance)
Thumb size ginger
1/2 teaspoon aniseed
1/4 teaspoon rosemary
1/4 teaspoon white pepper corns
1/4 teaspoon black pepper corns
3 medium tomatoes
2 small garden eggs (substitute with 1/4 purple eggplant)
2 medium onions
2 and 1/2 litters water
Hand full basil

Interesting. Ghana has lot of history with Indonesia dating back to the 1830s. Check out Belanda Hitam and the role they played in the Java wars.

That’s what I do as well for the chicken.. like when I and my family don’t want the skin I removed or when we feel to eat it I burn the chicken hair.. so to make sure we eat healthy and clean..

This is very delicious. My son is half Ghanaian and lost his grandma during covid who would cook this. Because he was only a toddler she didn't have a chance to make it, although he used to love her jellof rice. This is great, I have made this for us a few times now and will check out what else you cook.

One of the best Ghanaian cooking channels on KZfaq. Clean kitchen, very well explained. I love the fact that you use only natural spices and not those industrial cubes ( maggi etc.) filled with MSG. Great job !!! And it looks yummy too

@@NanaabasKitchen I used red pepper flakes instead of the actual peppers and chicken thighs. I took all the skin off the thighs and as much of the fat as possible.
