If you ever want to keep a flock of goats, consider the Girgentana breed: pretty to look at, sweet in temper and the milk produces the most amazing ricotta. We spent the morning with Nicola and Domenico who shared their low tech, loving way of making it.

My grandfather and his family were also goat herders from Aggrigento. These men are masters, preserving not only a profession, but an ancient art form. Seeing this father-son duo warms my heart and gives me peace.

The goats look enchanting....they are endangered. Let hope someone here will see this and fall in love to take up milk/cheese making with this breed of goats. The cheese looks great too.

These are beautiful animals. They are called "crapa giurgintana" in the local dialect of Sicilian language because the province and pronvincial capital were known as "Giurgenti" (Girgenti in formal Sicilian). Then came Mussolini in the 1930s who wiped away centuries of history by changing this (and many other Sicilian names) from Girgenti to an Italianized/Latinized version Agrigento. Thankfully the name of the goats remained the same, otherwise they'd be called "capre agrigentine".

One thing I like about Inspector Montalbano tv shows is the fact that the majority of their secondary actors are actually from Sicily. When you look at Nicola in particular - what a personality! So prepared to interact with the camera (and therefore the viewers!)

He just showed you. Ricotta is not hard. Go get some raw goat milk (pasteurized and homogenized won't always come together right as it is changed).

my father was born there and we all know about these people. my uncle still lives there and is 93. our name is salario. when he came over to the netherlands he brought ricotta with him. also salted so it can go over pasta, my fathers favorite. my father made ricotta himself at home.

I speak fluent Italian and spent a few summers (GF) in Sicilia. That has to be the thickest accent i have ever heard on this or any other channel . A village/family 5 miles down the road are going to struggle . OK maybe I exaggerate but maybe not.. He knows Goats and how to make cheese though .Another classic vid

@Richard Bartram, you're right. This gentleman is speaking a mix of Sicilian and Italian (spoken in a heavy Sicilian accent). Most people don't realize that the majority of Sicilians speak two languages, Sicilian (in the version of their local dialect) and Italian (often influenced by their Sicilian). When we speak SICILIANU STRHITTU our dialect changes from town to town, and in the larger towns, neighborhood to neighborhood. This includes our accent and the meaning of words. It's impossible to know the hundreds of dialects, but we almost always can identify each other as fellow Sicilians. Now the Arbereshe and Gallo-Italic are another story! 😂

@@jattupardu1860 my native language is Arabic and when we were in Sicily, I was amazed at how much of an imprint the Saracens left on the language and culture and you're right about Arbereshe. My former neighbor back in Austin is from an Arbereshe family that settled in New Orleans early in the 20th century so you can imagine what her wonderful way of speaking sounds like.

Band aid sticky plaster etc. The story goes that when the the Evil Admiral Nelson and his I cant say the word on you tube I will say "fancy lady " Hamilton ( thats how they are remembered there) devastated the place they needed to bandage up their injured sailors . Spare drapes. Say it in an italian accent. That said Neapolitan has a tradition of poetry and literature. My family once lived in London next door to a family where the parents came from Alto Adige. Antonio ( God rest his soul ) his italian was shaky to say the least and he was not a German speaker either just a mountain bloke. He was the only one of the young men of his village who made it back from the Russian Front. He walked . He did not have many toes ( frost bite ) but he made it. I digress. I hope someone somewhere is recording, Italian Languages won't die out for another few generations maybe more I think .

Such well deserved pride in their skill. Goodness, I need a holiday in Italy. Being in France, we are not welcomed at the moment. I take the train which goes from Paris which is even more forbidden... Chaffing at the bit as we used to say😁

Thank you- this brings back great memories for me. I spent a decent amount of time in Scoppello on the northern coast between Trapani and Palermo (closer to Trapani). Several flocks with shepherds, I got to help with everything. But they used woven reed baskets instead of plastic. I never saw anyone throw out the remaining whey. We drank it, the dogs drank it, etc. One time I went with the flock, and the shepherds grabbed some reeds, made flutes and took turns playing music that is probably ancient! Time travel...

Ms. Vicky, I like the goat's milk ricotta, i like to make raviolis with it, the ricotta, prosciuto, spinach in the raviolis, with a passata sauce & little fresh basil , it isn't Italian/Sicilian, but is good, we have no Appalachian food like that, that is my own recipe/concoction. God bless everyone & please stay safe, i'll be so glad when someone finds a cure/vaccine for this corona/covid -19 virus. May God cause it to happen soon, Amen

Some years ago, I was working on the countryside during summer. I used to buy goat's and cow's milk from a local shop that was unpasteurized, straight from the animals. I had to strain it through a paper filter to catch any hair or dirt and then heat it up to pasteurize it. Best milk I've ever had in my entire life. So flavorful, rich and fatty. I wish I could have some more now. All store bought milk taste "fake" in comparison with those!

If you just tried packed ricotta: Forget about that. Fresh goat milk ricotta is totally different and extremely delicious. My grandfather kept goats as well and made ricotta and other cheeses. It was always a big pleasure to me being there in Sicily, and ricotta (because of this) became my most beloved cheese until now. :-)

Just imagine, here in many parts of Canada. it's illegal to sell unpasteurized milk. There, they happily and patiently let the goats pass through the town, make all this without using PPE's, and enjoy the most wonderful foods made by people that have character written all over their faces. No phony plastic surgery or fillers, but are more beautiful and talented. The world that is pretentious needs to push the restart button.

@@sharinganeye9755 In many cultures, though, people know how to pasteurize milk themselves. I was a Peace Corps volunteer in Central Asia and in my village, people did their own pasteurizing because nearly everyone had cows and such. It's strange to think but true -- how often do we get sick in the US because of food recalls of industrial-farm raised products? The law was designed to protect us, but sometimes it is sheer accident and sometimes companies lobby for weakened oversight and watered-down regulations, so we are not as immune as we think sorry to say from the dangers of harmful pathogens

So ricotta is exactly what we call "Anari" here in Cyprus. We get it after the cheese comes out(halloumi) after adding fresh milk like the video

I like goats, my favourite ungulates, personality wise I always think of them as Jack Russell terriers with hooves. Those Girgentana ones have spectacular horns. 🐐 Nice seeing some of the ancilary producers to the wonderful Pasta Grannies you champion. Oh and I've never eaten as much pasta after getting your lovely book and watching your channel, I may have to send you a bill for bigger trousers at this rate. 😊

My grandparents, whose parents came from Sciacca, had a wooden sculpture of this type of goat. I never understood why until I saw this video where that came from. I just thought they liked the carving. There is so much cultural information in each of these videos -- just love this series so much. Apparently, la Girgentana is in danger of extinction

They are Jack Russell Terriers with hooves. When I had goats, they were into everything. One day they ate my laundry off the clothes-line. Boy was I mad.

Wow, if my goats' horns looked like that I wouldn't disbud them either. Most goats here only really grow stabby stabbers and I like having eyes and not stitches every time they accidentally toss their heads. Fresh goat whey ricotta is amazing.

I love these videos, thank you for shedding a light on the special, diverse cuisine perfected by these women (and men) throughout Italy. I have family from the Friuli-Venezia Giulia region (Trieste and Udine) and would love if you showed some recipes from there. They have a very unique history and the food symbolizes this melting pot of old world cultures which have influenced the region

Ricotta is not cheese. The cheese is obtained from casein that curds at a low temperature, ricotta from albumine that curds at 90 degrees centigrade.

The second one. Ricotta is not cheese. The cheese is obtained from casein that curds at a low temperature, ricotta from albumine that curds at 90 degrees centigrade.

Of course it's natural. It's a local specie of goat called "girgentana", which in fact means "from Agrigento"
