I'm British, so I thought I'd help with the pronunciation of Worcestershire. It's meant to be wooster-sheer, or just wooster. (Any place name in England that ends in shire is pronounced sheer.) I'm looking forward to dehydrating marshmallows, thanks for the idea!

I bought a dehydrator last week and I have done marshmallows, red peppers, mushrooms, some herbs and spinach. All came out well. I also tried banana and apple but I wasn't happy with them. I'll try again though. I'm in England and agree with your pronunciation of Worcestershire and other counties that end in 'shire' - but that doesn't apply if you are talking about 'the Shires'! :)

Depends on where in England you live. I'm from Southampton and I pronounce it Sher.

@@janinedear-barlow Yes, there are many variations but I think the one to follow would be the 'standard' - what used to be called 'BBC English'. i.e how a BBC newsreader would say it. Otherwise we would get bogged down in a multitude of regional variations.

@@BoingBB newsreaders are trained to speak with no specific accent. Go through the comments and you will see that more people use the way I say it. Both ways of saying it are right, it's just different places in England saying in different ways. I'm from the south so my way is right.

@@janinedear-barlow I'm not talking about the newsreaders of today, I was referring to the times when you didn't need a regional accent to work there, as seems to be the case now. 'BBC English' was designed so anybody could understand it. Many regional accents are difficult for foreigners to understand - Geordie, Glasgow, Norfolk, Yorkshire etc., so people in the media usually spoke with an accent-free voice. That's not to say there is anything wrong with regional accents but it's all about getting the message across clearly.

Salmonella’s is not just a few days of N/V and diarrhea! It can be life threatening. I have seen it eat through the bowels of infected person....spilling stool throughout the abdomen. Besides being a firefighter part time I’m also an RN in a large hospital. This infection ruins lives.

I don’t think it’s something you can just get rid of either. I know someone that told me they got really sick with salmonella and they said they’re now a carrier.

More or less I agree with you. Dehydrate what you are comfortable in doing and no to the rest. BTY I've been freezing Milk and cooked eggs for years with no issues.

I will have to read up on this, but how on earth could freeze-dried raw eggs go bad. You're not going to eat them raw, you're going to rehydrate and then cook them. What risk is freeze-drying adding that makes that unsafe? Even with some type of contamination, you're are going to be cooking them. Sounds like this should be safer than freeze-drying cooked eggs. This sounds more like it's an issue that arises not because of freeze-drying but because a small group of morons do not properly store or prep their freeze-dried goods but assume it's magic and no matter what they do it's going to last 25 years. So we get safety guidelines based on the actions of the lowest denominator of our populations instead of instructions on how it can be safely done. Can we not re-visit this no kid left behind policy so that it works by helping those left behind and not by slowing down everyone else.

I've been baking zucchini bread, cutting it into narrow thin pieces, then dehydrating. This makes wonderful biscotti and doesn't last anytime at all before I have to make more. (freeze lots of shredded zucchini for this purpose)

HUGE THANK YOU for this information! I'm eagerly awaiting the delivery of my dehydrator tomorrow (10/21/20)!! I've not done any dehydrating before, so this helped A LOT! I'm also getting the "Dehydration Cookbook" as well. I've warned my mail carrier that he'll get to deliver it. He told me that I need to make him something! I told him that I'll make him a soup mix!

I just found your channel and am enjoying all the dehydrating information you provide as I'm fairly new to dehydrating. Here's something I can help you with, the pronunciation of worcestershire, here in Australia and the UK it's pronounced wooster sheer, we also call it wooster sauce or just black sauce. And just a bit of fun trivia, the sauce was created by two chemists in the city of Worcester England named John Wheeley Lea and William Perrins, the sauce first went on sale in 1837 and the main ingredient in the sauce is anchovies. I saw a video that was someone showing how to dehydrate EGGS... and then saw your video right below on the recommendations. And clicked on your video. Your kinda my "Dehydrating Mentor" now! In the UK, when spoken, it is is normally shortened to just, "Worcester sauce", pronounced "wooster sauce" -- nobody bothers to say the -shire at the end.

We use the full "worcestershire" when talking about the actual place. My family originally came from there. We say WOO -ster-shur. Three syllables, with very quiet r on the end. Currently living in PEM-bruk-shu(r) another one that foxes travellers. But the sauce? Woosta. The Australians call it "woozy", as they love putting a Y on every thing. I can't see any point in dehydrating Woozy, as it is concentrated already, improves in the bottle, and would lose some of the volatile flavour substances too. But then i can't see the point in spending days reducing stocks to make powders, either, and that seems quite popular too. As an old style chemistry buff, I would be inclined to use a vacuum distillation process to concentrate liquids but that is probably too much of a faff for most preppers. (Hint, use the moonshine still!) Maybe I havent truly got the dehydrating bug, yet, where pushing the boundaries is all part of the pleasure. I do know that the basics - pumpkin, citrus, fruit, veggies, etc - are enough to keep me busy, and friends fascinated.

I just got my dehydrator and this video was huge for me! I wanted to do it all out of my excitement but I realize now maybe I need to rethink it a little. You can try frozen vegetables from the store. Been doing that it works pretty good then I vacuum seal them.. this way there's no worry about the freezer if the power goes out.

Hi! I’m new to your channel (and I love it) and to the world of dehydrated food. As a beginner I’m so grateful to you and your videos. I also found your web page by chance and loved too. I have seen many people dehydrating uncooked scramble eggs here in YT and TT and since the beginning I find the idea not so good. I was thinking about trying to dehydrate pre-cooked scramble eggs and hard boiled eggs. What I’m trying to figure out is what’s the best way to storage them without using the fridge. Do you have a video of all the ways available to storage the dehydrated food?

There is no other way to store them reliably than the freezer. They are fat - and fats turn rancid over time.

I'm late to watching your channel in the sense of I just came across your channel now. Thinking of new things to dehydrate. Eggs and milk products were never ones I even thought of yuck just the thoughts. I will leave those to the professionals. Buying powdered milk and sour cream although a little expensive I'd rather be safe. Buying worshestershire and soy sauces for my hamburger jerky is worth it to me instead of all the time to do an entire bottle and get a teaspoon full at the end haha. Your video was very informative and you have a new subscriber. Thank you.

I’m so glad I saw this today. I was seriously thinking about dehydrating butter. Then blending it up to make butter powder. I think I would be better off just buying it from a safe source.

You can make ghee if you have a lot of butter. It’s separating the milk fat, then canning the ghee.

On avocados, preservation book says poor for dehydrating but try it!!!!!!! Had a bunch getting too ripe. 💞💞💞💞😸😸😸😸 so i did. It turned out ok!!! Then ground it into powder!!!!

I didn't say you couldn't, but that they aren't good for long-term shelf stable storage because of the oils going rancid - you're welcome to do it. I'll be interested to know what kind of shelf-life you get from them - and how you plan on using it.

@@ThePurposefulPantry oh i understood that!!!! Im saying book said poor but try it. So i did. Probably done couple months ago. Experimenting!!!. I did like 5 or 6. I put in dehydrater slices for approx 36hrs. they had oil droplets. I blotted best i could. I let sit 3 days till oil disappeared. I assumed back into chip. Stored them in a jar for several weeks, then when hard like a chip, ground half into a powder. So far so good. Husband likes eating them like a chip. Gonna see if the powder will make up into guacomole!!! Powder is very dry. 💞💞💞💞😸😸😸😸 i just tasted the powder. It still tastes pretty good!!!! Like avocado!!!! Was actually glad you gav reasons why not to. So will use sooner than later!!! Or freeze. But expermenting right now!!!! Book didnt say why poor choice just try it!!!! Looked at book ,its Ball book of Preserving. It just cracked me up with" poor but try it" sobi did. !!!! n glad to kno about eggs. Thought about trying it and hamburger. Do hav auguson n ova easy eggs.

New to the channel and watching a bunch of the dehydrating ones. You have given me courage to try it. Can't afford an expensive unit, but found one to try for around $70. With current prices I am excited about doing the frozen ones. 2 questions...Can any frozen fruit and vegetable be dehydrated? Have been slowly learning how to use O2 absorber's, mason jars, Mylar bags and vacuum sealer. I have bought all of those. I have also bought a few dried vegs and fruits online and repackaged. I want to get in and out of them often to use, so can I just vacuum seal each time without using an O2 absorber? Thank You for all of your work, it helps all of us starting out on the adventure. P.S. so excited to try the marshmallow stick ones you did.

Good news - you don't even have to vacuum seal if you are drying properly, and storing in the right size containers. Don't worry with the O2 - you don't need them, and yes, you can just reseal with the vacuum sealer. Dehydrate most frozen things right on the trays without defrosting. I do suggest fruit leather sheets for frozen fruits because some can release a lot of moisture - you might want to defrost those first if you have a bottom fan unit.

My husband will make really small batches (1 tray) of jerky once in a while. He keeps it in the fridge. It never lasts longer than 2 weeks. My 14 yr old cant wait till we get a bit chillier here in NC so he can take the apples I just did to make oatmeal. He was eyeballing my bowl of peaches asking if I could dehydrate some for his oatmeal too.

Hello and congratulations for your videos. I dehydrated fully cooked scrambled eggs using a little bit of olive oil, I vacuum sealed them and stored in a dark and dry place. For how long will be safe to store? Thank you.

I wouldn't recommend it at all, especially with the oil. The optimum storage is in the freezer.

Glad you mentioned eggs. I just talked to someone and wondered if eggs could be dehydrated. So I figured I would scramble them up and try for the heck of it. So so glad I didn't. Thank you again for more info❤️

I'm fairly sure I mentioned it...you can do cooked, with precaution, and I linked it in the description box. Don't do raw ever. But even regular eggs need to be stored in the freezer for safest storage.

There are foreign channels I have seen, that are “canning” meat in a water bath method! Definitely not safe.

I saw the hungry hiker cook full meals like pasta and dehydrate them. Is this safe? Is there anything I should watch out for? Do they need to be stored in the freezer? Thank you so much.

If it's Backpacking Chef - he's great. I don't have any others to go by. But yes, many meals that I wouldn't recommend for long-term storage are fine for short-term camping trips. If you plan on making them ahead and they contain fats or proteins (broth included), store in your freezer until your trip, pull them, and use them with gusto!

Is freeze drying different from dehydrating? If so, I've seen people freeze drying eggs. Thank you for all your knowledge. I'm enjoying getting into dehydrating. We're leaving for long term traveling and mushrooms and strawberries are one of the hardest to keep from going bad. My mushrooms are conditioning as I write this. 👍

I was never sure about home dehydrated eggs (I've always bought freeze dried once they came on the market). I don't think I will do my own yet (4 pet hens will have to do).

You'll need to look at the instructions for each of the companies, but I don't with dried milk. I do with buttermilk because of the fats in them - it just helps keep it stored longer.

Depends on what was in it. If it was just the basic sauce and only a little oil, you're probably good - if it had meat, I'd tuck it in the freezer - even though it's likely safe, it's just safest storage. And as long as it doesn't turn, you have a year or more easily.

Hi Darcy, Thank you for all this good information. I have some mushrooms I want to slice and dehydrate. They've been in my fridge since last Friday and I just want to be safe. How can you tell if they aren't ok to still use? Are these still ok to dehydrate? I plan on doing them tomorrow.

They should be fine as long as they haven't gone soft or have obvious changes in color/texture or are growing mold or have become watery. Just do them alone ;)

I just dehydrated pepperoni and prepackaged sliced chicken (for sandwiches), for chips. My plan was to use them as snacks and chips for carnivore dip. I was searching to see if they need to be refrigerated after dehydration, but now I guess I’ll need to toss them in the trash. They’ve been in ziplock bags on my counter for several days. Every couple days I’ll smell the the chips and take one out for taste. Oh well, at least I haven’t yet dehydrated egg whites, which were next on my list.

No - you need to freeze them. You CAN dehydrate them, but the shelf-stability is not what you need, so store in the freezer.

Hi, just found your channel, loving the info. May I ask if i wanted to do say for example meat powder for flavouring, I would cook the meat to well done then slice thinly to dehydrate? then store in the freezer... If this is the case what temp and how long would you recommend and how long can i keep it in my freezer? many thanks.

You would do it just like jerky - so since you cooked it head of time, you can still dry it at 165F to keep it at a safe temp, and store it in the freezer after. You can store it in the freezer for about a year.

I have a question about the safety of dry storing 2 items. 1) I bought dehydrated butter. It's a quart size can that once opened you can use up to a year. I sprinkle it on fish and sometimes chicken when baking but there's no way I'll use it all in a year. Can I separate it into smaller jelly jars and use an oxygen absorber to extend the shelf life? 2) Husband can't have gluten so I have to buy him gluten free products which are expensive. I have a few boxes of gluten free cake mix that are close to expiring. I only use half a box at a time to bake a 8x8 cake. I have to ADD eggs, oil and milk to the mix so it doesn't contain it in the mix. Can I put that in mason jars with an oxygen absorber? I'm new to dehydrating dry storing foods (about a year) and wanted an opinion. I love your videos. Subscribed.

The butter is a short-term thing in general because of the fats. So you can put it in airtight containers and keep it in smaller jars just to keep from opening it. You can extend it by vacuum sealing and freezing it. Because I don't know what the ingredients are on the box, I can't tell you, specifically. Most grains, even non-gluten ones, don't have a long shelf-life. So I'd vacuum seal them in pouches and go from there.

If I wanted to create a backpacking breakfast of scrambled eggs, is it safe to cook the scrambled eggs first and then dehydrate them ,and then put them in vacuum sealed bags or is this the same issue as using unbooked eggs in the end?

If you go to the post that's linked in the description box, it gives you the info of how to do it, but yes, you can used cooked and scrambled. But it is safest stored in the freezer until you need it.

If they contain fats in them, no. If they are just beans and seasonings, yes.

Forgive me if this has already been asked, but could one dehydrate a bullion paste type thing like "Better Than Bullion?" They have so many different flavors, if this was dehydrateable would be awesome if they could be dried and made into a powder. I don't like most dried bullions because of the MSG in them.

You can dry just about anything. it's storage that becomes the issue. If it contains a lot of fat/oils in it, then it needs to be stored in the freezer for best results long-term. And yes, it can be pulled out and used for things that stay out, but it's not considered shelf-stable for long as the fats will oxidize and turn rancid over time.

Mesh helps things from not falling through. Fruit leather trays are what you use parchment for to keep leathers and fruits from sticking, or with jerky to not make a mess.

I remembered I had some money left on an Amazon gift card I got for my birthday in June, so I ordered 4 of the mesh screens. think I will use parchment tomorrow as I am anxious to use my dehydrator. Okay! Okay! I went a little rogue, and dehydrated eggs because the dried eggs from Judees has doubled in last 18 months. But after watching this, it’s just not worth the consequences. Luckily I only did 2 dozen. Thank you for the very valuable information!!

You can still choose to do it or not for yourself since they are your eggs and not commercial (less likely to have salmonella issues). It's a guideline - but you can choose.
