Today we're making a Dominican Style Pollo Guisado -- Stew Chicken. This is one of my favorite authentic Dominican dinners that I like to enjoy with white rice, Dominican style beans, and the perfect salad on the side. Pollo Guisado Recipe:
- 2lbs Bone In Chicken
- 1 tbsp Chicken Bouillon Cube
- 1 tbsp Soy Sauce
- 1 tbsp Sazon con Achiote
- 1 tsp DR Oregano
- 1 Lime
- 1 tbsp Tomato Paste
- 1/2 Onion diced
- 1/2 Onion Sliced
- 1/4 Pepper Diced
- 1/4 Pepper Sliced
- 1/2 tsp White Sugar
- 1 tsp Red Wine or White Distilled Vinegar
- 1 tbsp Spanish Olives
- Olive Oil
- Cilantro *optional
Easy Dominican Beans Recipe:
2 cans of Roma or Pinto Beans
½ lb of kabocha, pumpkin, or butternut squash
1 Small Red or White Onion
¼ Green Bell Pepper
¼ cup Recao or Cilantro
2 Sprigs Fresh Thyme *optional
⅛ tsp White Vinegar
¼ tsp Light Brown Sugar
1 tbsp Chicken Bouillon/ Sopita
½ tsp DR Oregano
1- 2 tbsp Tomato Paste
2 cups Water
