Mickey Moose “Eric and me” would be correct in that case. Because you would say “it’s me vs Joey and Bryan” not “it’s I vs Joey and Bryan”.

The second is incorrect use since "its I vs joey and matt"is gramatically incorrect. "Its Me vs joey and matt" is grammaticly correct, hence the correct form of the sentence would be the following: Its me and Adam vs joey and matt.
