A pocket notebook might seem like an obvious choice to bring with you when you start a new job but (believe it or not) I used to show up to work without one. Hopefully you had a takeaway or two from this video, I wanted to share more than just a notebook breakdown!

My first job was introduced by a high school friend of mine. Never had any job experience before, only had one year of home cooking experience, I showed up on my stage with a new bought classic Victorinox 8 inch chef knife with no guard in my pocket, pointing straight down. It was until one weeks later after that I realized how dangerous that was. I was so lucky to be accepted because I didn't know anything at all, and did really really bad at my stage(worse than anyone I seen later in my career). the people in the restaurant I worked at was so kind and patient to train me and bring me on track.

My first job was in a small restaurant back in my hometown in Cuba(I was 17). I was helping the chef to do prep and plating some dishes during service and at the end of the shift I use to clean everything ,floors, dishes etc. I never thought I would get paid for that job because was part of a summer culinary curse I was taking at the time. And for my surprise, at the end of the first week the chef started paying me the equivalent at 3 or 4 dollars for shift. I felt like a millionaire back then.

I'm not in the industry now but my first kitchen job was at Pancho's Mexican buffet making tortillas and sopapillas from scratch. It's where I learned the benefit of having a recipe by weight instead of volume.

Just started my apprenticeship at a great restaurant in Canberra, Australia. Of course bought a notebook on my first day to jot down all the information thrown at me. Helped me out immensely and I think the Chef was impressed with my organisation.

Yes yes yes yes. Notebook is a must, I almost didn't bring one the first day because I thought it was unnecessary. Boy am I glad I brought it because I really did need it for all the ingredients I needed each day and all the prepping to do. Wish my notebook wouldn't have fallen into the dishwasher. I've been waaaayyy more careful with my newest one and love it still. Great video again Justin, big fan!

First job wasn't a kitchen position (I was a music teacher in high school) but my first kitchen position was at 10 Barrel Brewing Co. in Bend, Oregon (I was 18). I'm now at my third restaurant (my first fine dining establishment) with opening night tomorrow. I never knew I needed to write so much down in my life(I'm only 21 now)! I'm currently using notecards but after today (or as soon as they're delivered) I'm always going to have a water-proof notebook in my back pocket, no matter what!

Then come back to our place help with dinner then change and was bus boy in up stairs dinning room. I just bought a larger version of the pizza shop. Now it’s time for real fun. I am not actually a professional chef, but an eager and self-taught home cook. My background is in an organizational job so I couldn't agree more and am a big fan of Rite In The Rain. My first job was, as a teenager, with a CNN affiliate in Hong Kong. Also, as a home cook, I have learned a lot from you and love your channel. Would love a video that goes over all of the little things you know from a professional kitchen: how to store herbs for service, how long you can prep certain things in advance, what needs to be done "a la minute." Maybe that's too basic for you to expound on but I, for one, would be into it! :) Thanks for all your content!

I'm not in the biz, but in high school a bunch of my friends and I worked at a place called Gianni's Pizza in Salinas, CA. We made some delicious pizza, and we tossed the doughs by hand, which was pretty novel back then. Oh, and for some reason, we'd always seem to get a large pizza order wrong just before closing on Friday and Saturday nights, and we'd have to take it with us. 😆

I am currently a 1st year student. I was placed at my first establishment in December. I was treated SO BADLY. I couldn't handle it. I was then told by my school that I'm not suited for kitchen life. I was basically kicked out of one of the best cooking schools in South Africa. I took things further and they were forced to place me somewhere else. I was then moved to a 5 star restaurant at a hotel. I've been doing so good that they offered me a permanent job. Keep in mind that I'm still a student. So as from September this year, I will be working as a Demi Chef de Partie plus I'll be going to school on my off days. I was also a dishwasher at times where we had no staff and I got through it. I work my ass off and I don't care if my first establishment hated me. I'm so proud of how far I've come. (I'm also proud that I never fell for those "more the freezer" and 'crop some flour" jokes. Actually I almost fell for the 'if you can swallow a tablespoon of cinnamon I'll give you a 1000 bucks joke).

FUN FACT! Got my first Rite in the Rain book in the army. The army prepares you to be a great cook. 1. Always carry a pen and paper so you can write stuff down because as fast as information comes, you will forget just as fast. 2. Don’t look like a turd. Your appearance matters. 3. Always be on time. Rule of thumb here is if your on time your late and if your 15 minutes early your on time. 4. Just say yes Chef lol. Having a good attitude and doing your best will pay off in the end. Oh and my first job was at Streamsong Golf Course in Florida.
