This one did not disappoint. I had been waiting to show anything from the Minimalist Tiki book until I was ready to make the Waikiki at Sunset Forever. The flavors of this one are intense, familiar, and somehow new all at the same time. The rum is strong and the texture is unique from the heavy cream. I highly recommend trying this one!

Waikiki at Dusk Forever
By Shelby Allison and Erin Hayes
½ oz cinnamon syrup
½ oz cold brew (15 ml)
¾ oz heavy cream (22.5 ml)
¾ oz passion fruit syrup (22.5 ml)
½ oz Giffard creme de Banane (15 ml)
½ oz aged Jamaican Rum (15 ml)
½ oz Overproof Rum (15 ml)
1 oz moderately aged (30 ml)
Method: Flash Blend
Glass: Coconut Mug
Garnish: Orange peel, sliced banana, cinnamon stick, orchid, nutmeg

Great video, as always! Minimalist Tiki is is a great book with a wealth of information and many good recipes. I think Pietrek's rum categorization system is far superior to the Smuggler's Cove approach for home enthusiasts. Particularly his most recent revamp posted last year on his blog, Cocktail Wonk - I'm not sure whether he's managed to incorporate that into the newest printings of Minimalist Tiki yet (the older system is still a lot better than Cate's for my money in any case). Pretty much any recipe in the book attributed to Brian Maxwell or Jason Alexander is a great starting point. Also the Quarantine Order, Transatlantic Orbit, Mammoth Tusk, Four Suns, and Polynesian Spell II are among my favorites. A lot of the recipes in the book come straight out of highly regarded tropical drink bars across the US and even internationally. It is a tremendous resource.

This one was great! Somehow it had slipped under my radar, even though I’m a big fan of the Minimalist Tiki book. The rums are very up front in a good way - kind of surprising when you look at the recipe. Thanks!

Oh wow. I have never heard of or had this Tiki cocktail. I haven’t seen this cocktail book. I’d live to find a copy somewhere. I will look. I like cocktails that take a bit of work! Wow to have this Tiki cocktail on Maui would be perfection to me! I’m going soon in February so I plan to practice first and make this on the trip!! Of course a Mai Tai will be essential!! Great channel! Cheers!

It is a very delicious drink I didn't have the angostura 7 so I used Appleton 8 but I had all the other rums that you used and all the other ingredients very tasty thank you for your video

Always put off by that book because Tiki is inherently maximalist but I may have to pick up a copy.

Not a huge fan of all of the drinks in Minimalist Tiki (a lot of them are tweaks of classic Donn drinks), but this is one of the big standouts. "I Should Coco" is another standout from the book.

Another great vid! Haven’t cracked my MINIMALIST TIKI book yet either! Quick question. For Cold Brew, is it literally just cold coffee? What do you use?

Its a cold brew method and mine is homemade. For me that's 3-4 parts water to 1 part coarse coffee that steeps at room temp at least 12 hours.

@@makeanddrinkThat’s technically a concentrate, right? I’m always annoyed when recipes don’t distinguish between cold brew concentrate and ready to drink cold brew that’s further diluted with water. But for only 1/2 oz, concentrate seems like a safe bet.

@@makeanddrink Brewing 1:3 or 1:4 are concentrate ratios though. Or are you diluting later with more water?

You talked about Dr Bird being an acquired taste...I just got my first bottle of Wray & Nephew and I initially despise it too haha. I love Jamaican funk a la Smith and Cross - how and why is W&N so different, and does Dr. Bird seem similar?

While I wish there was a simple answer here, it's a pretty big question to jump into. Different distilleries will have different methods for distilling and marks they use, but the most significant factor that differentiates them is esters. I think W&N is around 100-200 (parts per million) while Rum Fire is somewhere around 500. Hampden does a great job of showing and disclosing that so you can compare the, But that doesn't mean it's 5x more flavorful/funky. Different esters can have more pleasant or more unpleasant characteristics. Doctor Bird is aged and I think it's distilled at Worthy Park. Ageing greatly changes the flavor and a high-ester rum that's aged will be more mellow than an unaged. But the taste is obviously preference. I find a funky Rum Fire more palatable than W&N because W&N to me is like gasoline/alcohol and not as much flavor comes through or covers up the high proof.
