As you point out, the speed of modern foilers means that their sails are never trimmed for direct downwind. I sometimes wonder how the big foiling tris trim their sails when doing 50 knots. Trimmed for close-hauled with the true wind dead astern?😉

It's a race, you have to redline the sails and boat to win, it's not pleasure cruising where you would absolutely be reefed in that situation.
