My mother owns a confectionary shop and makes this candy all the time. I recommend adding maltose to the candy mixture to make it easier to work with, it doesn’t ruin it either. For the size of this recipe I’d say around 100 grams of maltose. (Edit:) I meant add maltose to the mixture before you cook it.

Hmm I am unsure why yours is chewy but when I bought that kind of candy in korea it was not chewy at all. Each strands are like threads so its like you're eating thread. It doesn't sound appealing. But it's really tasty especially since they put fillings like black sesame and pistacio.

Its usually broken up into several parts and then you use it to wrap things in it like peanuts, chocolates or desiccated coconuts. Not eaten straight like u would with normal cotton candy

(Blueberry, raspberry, etc.) •Instead of using a microwave or hurting your fingers, put the *puck in some warm water to get it to be WaRm thoroughly. traditionally it will be wayyyyyyyyy thinner than that. literally thinner than hair strands. and it'll be curled up into tiny chunks and when you eat it it's not chewy, it melts in your mouth.

Dragon beard candy is generally used to wrap things within like peanuts. You don't really eat it on it's own. It's meant to be light and airy, so that it dissolves in your mouth.
