Hi Gavin, I read about Tzafatit cheese and its recipe on your littlegreencheese blog and was intrigued by it. It is an Israeli cheese which may have Biblical roots to it. I tried searching a video of it on KZfaq but could not find it. Have you tried making it? Do you know how it tastes like? What cheeses around the world are good substitutes for Tzafatit cheese? Thank you for your help.
