One version of Hainan chicken rice ORIGIN was about 120 years ago, a Hainanese amah (home maid) cooked the Hainan style rice (used chicken fat) and DEBONED chicken, while local spices were also applied for more and better favors... to serve her British boss and family. This rice was well received, and then this meal had been spreade to the peer amahs to serve their bosses, then to the eateries especially appealed to the lower class labours in Malaysia and then Singapore because of good price and such a perfect quick meal. Thailand should be mostly the 3rd generation for such popular cooking. The proper name/ meaning for this unique rice should be HAINAN AMAH CHICKEN RICE... ... likewise as the MA PAU TOFU... the special way of cooking tofu by MA PAU (old lady MA).

I watch this segment with a heavy heart. Heartfelt sympathy for ur loss. Thx so much for doing this at such a difficult time. Ur right, Hainan chicken should be served warm, actually I don't mind it being piping hot. We share the same dislike for salty stuff, nowadays chefs every where are too generous with the salt🙄

我個人的喜好，用雪雞脾做海南雞飯始終不及用走地雞的有雞味 ,我叫這飯時一定先問是否走地雞才落單。憑肉眼所見, 你們所試食的大部份都是用雪雞脾。

其實係新加坡，泰國或者馬來西亞用噶都係白種雞，只有香港或者大陸先多用走地雞！海南雞同白切雞有d唔同，好食噶海南雞除咗要有雞味，還要係雞身上有淡淡的香料味！

其實我認為海南雞出餐時應該是底於室温些小,皮要脆,皮下要有肉汁凍．我今天剛巧在這裡的馬來餐廳吃海南雞,碟子是很熱,可以想像一下,這不是很正宗的,有些失望．

If you put effort to it, you can make the chicken rice too. I use Thai rice and put 1/4 teaspoon of chicken fat into the rice before cooking. That is for each cup of raw rice.

Yes I have tried to make Hainanese rice at home. Just not as delicious as those from restaurants 😛

@@TorontoHKger 1. They make 20 chickens a day. They have more practice. 2. They might use something like chicken powder or MSG. I just use fresh chicken and I can confidently say my chicken is better than 90% of chicken rice restaurant in my city. Actually the red sauce is hardest to make. Most people use substitutes ingredients. The lime that is supposed to go into that sauce is C$14 per lb in Toronto. Here they use regular lime or vinegar.

When the red sauce is sweet, there is a decent chance it came from a bottle. Thai makes their sweet chili sauce this way.. I have seen how Malaysian restaurant made their own red sauce.

newmarket的松屋（只有那家分店）的海南鸡是最好吃的。而往南开车大概3分钟那家茶餐厅（忘记叫什么名字了），海南鸡饭的饭是最好吃，油香味重

Sorry for your loss. My condolences. Great video. Thanks for putting it together. My own experiences is that they are closely packed together. While I enjoyed Garden, I don't find them leaps and bounce above the others. Plus their lineup is not worth the wait, IMO.
