Here is my version of Dutch oven Tri-Tip! You will appreciate this version with its overnight seasoning, seared crust and onion base. No soggy Tri-Tip here.

We did this placing the Dutch oven in the kitchen stove for about 20-25 min at 350 and it did great! Follow all other instructions for success. Great video

I only wish it was easy to find tri tip around here where I live Gary. Awesome way to cook it on a bed of onions in the dutch oven after the sear. Looked very inviting! I loved the effect you did. It was flawless!

Smoky Ribs BBQ & Southern Cuisine: Trader Joes has been carrying tri-tip here in the north east. I believe around $9.99/lb. Maybe check that out.:)

I'd like to do this for camping but now n able to dry it in the fridge first.. any suggestions? Awesome video

Charlean, you should be able to duplicate this in a ice chest. Worst case scenario, you do it before you leave. The most important part of this is to season it a day before. Just pat it dry before searing. Hope that helps!

Cooking Outdoors ---/ Expensive too ... stripped and started re-seasoning 2 new cast iron skillets today and i have a 15 inch diameter Dutch oven from eBay in the mail to me now not counting the 1/2 ton of cast iron I've already had but hey .... I'm loving it more and more !!! Love your videos ....!!!

Do you recall how many hours you cooked it for. Looks good. Thank you for all the tips. I just bought a 12 inch Dutch oven and going to try it this weekend, for Father’s Day

Nice Tri-Tip! Did the onions add to the flavor of the roast? I love onions when roasting or braising any type of meat.

Thank you! Yes, they do add flavor but mostly when you eat them with the Tri-Tip :-)

The meat thermometer ... how does it not burn in two between the lib and pot? What am I missing? Trying this method this weekend at Bodega Bay.

Roger, I have never had a thermometer wire burn between the lid and pot. Not saying it couldn't happen, just never for me. My grills get hotter than my D.O. and that has not been an issue either. Camp Chef does make D.O.'s with a thermometer slot in them, makes this issue worry free. Not that any of my comments are guarantees but I think you will be ok. Let me know how the recipe works for you! G

You should temp the meat.

you dont cook Tri Tip with Mesquite wood.... you use Red Oak

In California it is Mesquite and that is unlikely to ever change.
