Tomato Rice
Ingredients
1. Raw rice - 1 cup
2. Tomato - 4 to 6 nos
3. Ghee - 2 tbsp
4. Chana dal - 1 tbsp
5. Blackgram dal - 1 tbsp
6. Mustard seeds - 1 tsp
7. Red chilli - 3 nos
8. Cumin seeds - 1 tsp
9. Nuts - 8 to 10
10. Ginger - ½”
11. Green chilli - 3 to 4
12. Shallots / big onion - 5 to 8
13. Salt - to taste
14. Sugar - 1 tsp
15. Turmeric powder - ¼ tsp
16. Chilli powder - ½ tsp
17. Asafoetida - ½ tsp
18. Curry leaves - 2 twigs
19. Coriander leaves - 1 tbsp
Preparation
1. Cook the rice properly & set aside to cool.
2. Heat ghee, season with the items (4 to 8), sauté well nuts followed by ginger, green chilli, shallots etc.
3. Add tomato and sauté well till it gets mushy and oil separates.
4. Add salt, sugar, turmeric powder, chilli powder, asafoetida and sauté.
5. Add the rice, stir. Add ¼ cup water, close and heat 1- 2 minutes, stir well, remove and garnish with coriander leaves.
