I'll show you how to make easy challah bread! As a non-Jewish Asian American, it’s a surprise that I somehow ended up going to Jewish preschool. I grew up in rural upstate New York and the Jewish preschool was the only one near me. We always had incredible challah at school, and I turned into the biggest challah snob - at 3 years old. The soft, eggy, sweet bread with the beautiful brown shiny crust was one of my favorite foods growing up. To my dismay, as an adult I’ve had a hard time finding good challah from commercial bakeries. They tend to be overly dry or lacking in flavor so I learned how to make my own, based on my childhood memories.
Let me share that recipe with you today! I’ll be making enough dough in this video to make 2 loaves - one braided and one in a loaf pan. To be honest with you, I usually make challah in the loaf pan because it’s easier and I actually prefer the sandwich bread shape but I’ll show you both ways here.
Double recipe (yields 2 loaves/braids):
5 eggs (4 for dough, one for egg wash)
1 1/2 cup warm water
⅔ cup white sugar
½ cup oil (I use grapeseed oil but any vegetable oil with neutral flavor will work)
2 tsp himalayan pink salt
2 tsp active dry yeast
Approximately 1000g or 6 1/2 cups (all purpose or bread flour)
Single recipe for 1 loaf (This is what I usually do!):
3 eggs (2 for dough, one for egg wash)
¾ cup warm water
⅓ cup white sugar
¼ cup oil (I use grapeseed oil but any vegetable oil with neutral flavor will work)
1 tsp himalayan pink salt
1 tsp active dry yeast
Approximately 500g or 3 1/4 cups (all purpose or bread flour)
Bake at 350 deg till crust is dark brown, about 45-50 minutes

Hi Fairuz! That's a great question. Yes, you can totally use all purpose flour instead. That's actually preferable for a more tender crumb but I just use bread flour because that's the only white flour I have at home. If you give it a try, I'd love to know how it goes for you!

...HI ROSIE...may I have your opinion on two things, please---would it be okay to substitute coconut sugar for regular sugar, and to replace some, maybe a quarter or half, of the white flour with either spelt flour or white wholewheat flour? I love your videos! Thank-you so much!

Hi Judy! Thanks for your kind words and those are really great questions. Yes, you can totally use coconut sugar and replace up to half of the white flour with whole grain flour. I've done half with sprouted whole wheat flour and it's absolutely delicious!

Hii again! The last proof at room temperature is about 1-2 hours till it's at least 50% larger in volume. My room temperature is about 66-68 deg F so if your home is cooler or warmer than that it could be longer or shorter. I hope that helps!

Do you think I could make this bread with sprouted spelt or sprouted whole wheat? I only eat whole grains. Thank you for the great recipes!

Hiii! That's a great question and yes, you can totally use sprouted grain flour! You might need a tiny bit more water so you can start with the amount of water in this recipe but feel free to add 1 Tbs of extra water at a time if the dough feels too dry.

Hii Tiffany! Thanks for checking out my video and that's a great question. I'm using active dry yeast here, which is the dry yeast that's commonly sold in little packets. It's a dormant yeast that doesn't require any regular feedings, unlike sourdough starter which requires regular feedings for maintenance. I hope that helps!

Hi Rosa! Yes, challah tends to be a sweet dough but you can definitely use half the amount of sugar and adjust to your preferences! Have a wonderful weekend!

Can you use instant yeast instead? If so, would you add it to the liquid ingredients or dry ingredients?

Hi Elaine! I've never tried it with instant yeast but it should work. You could add it to either the wet or dry ingredients since instant yeast doesn't have to "activate" in liquid. However, it might be easier to add it to the wet ingredients like I do with the yeast in the video so you don't have to mix the dry ingredients separately. You can use the same amount of yeast but your rise times for the first and last rises at room temperature might end up being a bit shorter (~15-20 minutes less) since instant yeast is usually more active than active dry yeast. I usually look for about 50% increase in volume in the first rise and about 1/3 increase in volume in the last rise. If you give it a try, please let me know how it goes!
