RECIPE:
1 lb - Ground Beef (or Turkey)
1/2 cup - Diced Onions (you could also add diced green peppers)
2 10 oz - Cans of Red Enchilada Sauce
2 tbsp - Green Chilies or Jalapenos (optional)
2 cups - Cheddar Cheese (you can add more or less)
12-15 - Yellow Tortillas
Vegetable Oil
1. Preheat oven to 350 degrees. Brown your ground beef and season to your desire. Drain any excess grease.
2. Take one can of enchilada sauce and pour in beef. Add cheese (leave some for later) and green chillies and/or jalapenos. Stir over medium heat and mix well until cheese is melted.
3. In a skillet using vegtable oil lighlty brown tortillas on both sides and get a generous amount of meat mixture and put in tortilla and roll tightly in casserole dish. Repeat this step until all meat mixture is gone. This will make approx. 12-15 tortillas.
4. Pour second can of red enchilada sauce over tortillas and top with remaining cheese. Bake uncovered for approximately 20-30 minutes until bubbly.
5. Let cool and ENJOY! Top with sour cream or serve with rice.
