🤩 I prepped TWO delicious meals for my family with just 💰$8💰 worth of ingredients. Cooking on the cheap doesn't have to be hard, and making inexpensive meals for my family doesn't mean we have to sacrifice all the flavor and nutrition. I know food costs vary greatly from place to place, but I hope these two easy meals give you some ideas for using ingredients that are typically among the least expensive items in the grocery store.

My sister freezes cottage cheese and when it thaws, she says the texture is more like ricotta cheese. My husband calls it "ricottage cheese". She uses it in lasagna, and it is very good.

We grew up with my mom making lasagna with a mix of cream cheese and cottage cheese. Never thought to freeze it I will give it a try.

Thank you for the tip. My store ran out of ricotta cheese which I prefer in lasagna so I had to buy cottage cheese. Definitely will try this out!

I love mixing green onions and diced celery into my cottage cheese along with salt and pepper. I eat it on a bed of lettuce. One of my favourite quick meals.

I love sprinkling a little ranch season in my cottage cheese and dipping carrots in it. Great way to add a little more protein to a snack. We buy the big containers of cottage cheese because we eat it so much.

For people looking for a dairy free alternative to the white sauce-a little garlic, seasonings and some butter/margarine (I have used the take out butters from Cracker Barrel or restaurants that bring bread to the table) or some sort of neutral oil and/or olive oil heated up with that pasta and the veggies would be delicious, I’m sure! As someone who tries to eat dairy free for my personal health restrictions, I really appreciate that your bean free recipes weren’t entirely dairy reliant! The skillet lasagna looked so good even before you put your cheesy topping on it!

You do what's best for your family food wise. I learned from several other KZfaq bloggers page for Vegetarian/Vegan can take any recipe and change it for what's best for each person. There is always replacements that can be used for Vegetarian/Vegan/Non Dairy etc. I usually write down your recipe's if something my family would like and write the item can be the replacement weather it's non dairy cheese (homemade or store bought) and tofu or meat replacements etc. If something I know my family won't eat in a recipe I just take it out and leave out completely or bulk it up with more veggies etc.

These meals look delicious! Pork sausage is not cheap in Canada. $6/lb is the cheapest I can find it. Dairy is also expensive. Cottage cheese is $5.29 and the mozzarella is $3.49 for a similar size to what you have. These meals come to approx $18 here! Not every one will be a savings here, and that’s ok. It’s still fun to see you get creative.

To make some dishesmore "meaty" my grandmother would brown her meat and in the drippings would toast some oats. You really couldn't tell. The only reason I know is I asked how she made her chili so thick and meaty.

I grew up mixing oats right in when you brown hamburger or sausage, and used to do it when my kids were little as well, to stretch meat further. Oats absorb flavor really well, and “disappear” into the meal. It’s a great way to save money on meals.

I watch other youtubers with large families and am surprised at how little they eat - I almost always want to yell " add a salad or 2 more veggies to that meal".

She does have 3 children and I believe The oldest is maybe 10 so she isn't feeding teenagers but yes that does seem to be a small amount of food. I add water to soups, extra veggies etc to stretch and I am cooking for just one person.

try freezing your lunches in silicone muffin cups they pop out nice for ind portions and they take up less room in the freezer. I do it all the time for soups :) ps thank you for the vegetarian version, i usually take out the meat for any meals you make they end up the same. T

I think doing menus based on what your family eats, makes sense. Our family is both gluten free and dairy free, just to name a few things, due to both of our daughters having food allergies. I still enjoy watching what you come up with and often find inspiration from what you have made for your own family and tweak it to fit ours. Thanks for all the videos!

Thanks to my mom I grew up eating homeade cottage cheese and it is very much a staple in our diets. I could live on beans but my hubby doesn't really like them, I agree why would you cook things and then nobody would eat it. I like that you do give additional ideas and suggestions.

For GF, I typically just swap the pasta for a potatoe or rice and pour the sauce on that for me and kids top their pasta with sauce. Although, since I'm the GF person it's easier because I'm not picky.

Love these ideas! I often forget that I can blend up my cottage cheese to make a sauce when I’m not in the mood for it as a side item - I also like to blend it up and add it to spaghetti sometimes so it’s smooth since some people have texture issues with cottage cheese lol. Aldi's is probably the most economical store around. Unfortunately my closest one is 1.5 hours from here. Great job! I'm sure you help so many people on a budget. And people can substitute items for ones that fit their diet

I tried your baked pasta cream cheese chili bean thing from the other day. Delish! It cost about $11 in New Zealand for all the ingredients and I used broccoli instead of carrots.

I've never eaten cottage cheese. I don't know why. I think it just looks weird but making it into that sauce with the pasta water seems like such a great idea. Maybe I'll get brave and try that. Thanks for the ideas. I know you use your Dutch oven almost every day. I'm pretty sure I'm getting one for Christmas bc I talk about you using yours all the time. A box came today that has the brand on the box. I hope I can figure out how to use it!

I used to think that and would use it in my lasagna mixing in an egg then toss the leftover cottage cheese. One day I tried it on its own and love it. Mix in fruit especially bananas top with Wheat Germ or use Strawberries, Blueberries top with Walnuys or Granola yum yum

If you ever try it I definitely suggest staying away from daisy brand I don't know why but it's always dry. Which if you ever try cottage cheese you'll understand why it's weird to say that. Personally the 4% or 2% small curd walmart brand is my favorite it's just so good to me.

For the skillet lasagna you could also add some Broth and make it more of a soup to go a little further

My kids will not eat any type of casserole. I have tried so many times, different things. All the parts they like individually but they hate having everything all mixed together. Makes cooking sometimes more difficult. But oh well I love all your ideas so smart!

You could probably make a lot of these “deconstructed” for them. Mix yours together but keep the sauce, pasta, veggies, cheese separate for them.

I don't like tomato paste. I just don't see the reason for buying paste and then using liquid with it. I just use tomato sauce. It is a lot better for people who don't like the paste. Just a suggestion for those who don't want to cook with it. I also blend up a can of tomatoes if I don't have sauce or need it.

Hey Mindy - I am also a cottage cheese fan. My favorite brand is Daisy as it tastes great without the additives of flavors and gums. Not sure they carry it your area, but if so - you should try it. Also, for a variation in eating cottage cheese you should it with ketchup on the side … that’s right! When I read Ronald Reagan liked cottage cheese that way, I tried it and it’s a great combo - kinda like cottage cheese and tomatoes. 😊

@@SeeMindyMom Do not have Good Culture in NE Ohio. Sounds good though. I do like organic food products w/o additives. Truth be told, though, I do eat an occasional fast food sandwich while traveling. Blessings.

I love Braun’s cottage cheese but if it’s not convenient to stop there I only like the Kroger brand in this area (Dallas/Fort Worth) I like good culture too but Kroger is much less expensive. I’m a cottage cheese connoisseur 😂. Daisy is too dry for me although it would probably work for cooking.

I recommend looking up chicken paprikash. I make it using paprika and some smoked paprika. Smoked paprika is more expensive than regular paprika, but a little goes a long way, and it's absolutely amazing. You can make paprikash with whatever chicken is cheapest. I have used thighs and also leg quarters. The smoked paprika will cost a few bucks, but if you like paprika, I bet you will love smoked paprika. I use it often, in hummus and other dishes. I haven't got tired of chicken yet. I make good broth from leg quarters,and use the meat for many dishes. I love a nice cottage pie.

I was going into Aldi this afternoon (Wed, Dec8) and I think I saw you coming out as I was going in. If it wasn’t you it must have been your twin! This was the Aldi in Edmond, OK.
