EASY HOMEMADE GRANOLA BAR RECIPE

FULL RECIPE:
(yields 24 bars)
INGREDIENTS:
- 1 cup peanut butter (natural)
- 2/3 cup honey (natural)
- 2 eggs
- 4 tbsp oil
- 2 tsp vanilla
- 6 cups oats
- 1 cup shredded coconut
- 1 cup packed brown sugar
- 2 pinches of salt
- 1 cup chocolate chips
DIRECTIONS:
- preheat oven to 350F
- mix peanut butter, honey, eggs, oil and vanilla in a mixer until well blended.
- combine oats, coconut, brown sugar and salt in a separate bowl. Stir to combine evenly.
- pour oat mixture into wet ingredients and mix.
- pour chocolate chips in mixture and mix.
- pour mixture into greased sheet pan and press firmly and evenly across pan.
- bake for 12-15 minutes or until edges start browning and bars feel soft but set (bars will continue to cook in hot pan once removed from the oven).
- let cool for 20 minutes, then cut into bars and put on cooling rack.
- store in airtight container or freeze.
