Most condiments folks buy are so easy to make & customize at home. I can't remember the last time I bought mustard, mayo, ketchup, hot sauce... You name it, you can make it better!

I made this mustard and I thought it tasted like ear wax but I let it sit for a month in the fridge and now it is the best tasting mustard we have ever had. I am making more tonight.

There’s an old family recipe for prepared mustard, tucked into in an ancestral cookbook……we called it, “Morris’s Mother’s Mustard”, because we couldn’t remember her name! It’s more like the preparation you get in a Chinese restaurant, made with Colman’s Ground Mustard, water, flour, and sugar….it has a hard bite, but the sweetness helps with the pain!

I made it using the ingredients as she gave them as far as measurements. I bought black mustard seed and split small yellow mustard seeds from the Indian food market as they were so much cheaper. The Indian mustard seeds did not absorb liquid as much as the ones she used. I strained them and found that I had about 2 cups of liquid left over after making the puree, but it was delicious, and it is sitting now aging. Already tasty and waiting for it to age more for heat. I added two teaspoons of turmeric at the end for color.

I’d also recommend playing with different ratios of whole to puréed mustard seeds. I prefer half-half whole and puréed or even a little bit more whole mustard seed but to each his own

@@KevinBullard Ukraine is a huge producer of mustard, so we can chalk that up to this miserable war! I saw it in an article from Canadian News, as Canada is also a producer of mustard. The French are the biggest consumers & bottles of Maille are being sold for ridiculous prices on Ebay! The plant loves cool weather apparently.

Nice - I've always wondered if it needed to be cooked, or if it needed some special ingredient or processing (like how lye is used to soften corn kernels). It's simple enough to give a try.

Would you only use the light seed, as most Dijon I have seen is pretty light colored, aka Grey Poupon.

I made two batches of this over the weekend for an Oktoberfest celebration. I used white-wine vinegar, because I didn't have enough apple cider vinegar. Both batches came out perfect. I didn't have enough time to let the mustard sit and intensify, but that was OK. It was already pretty intense right out of the food processor. This mustard was amazing on brats and with soft, chewy pretzels. One tip. If you're going to make a lot of this, try buying your yellow and brown mustard seeds in bulk. At my local Safeway, a small jar of brown mustard seeds was almost $10. At a different store that had bulk spices, the same quantity of brown mustard seeds was just a bit over $2.

For a Dijon, swap out a 1/4 cup of vinegar for that much dry white wine.

The temperature of the water you use will affect the spice level of the mustard. Cold water will make hot mustard and warm water will make mellow mustard.

Why substitute? Diabetic? Don't like or have brown sugar? If you don't say the reason for substituting then the easy answer is an equal amount of white sugar or 1 Tbsp + 1 tsp honey, or just leave it out.

I've seen lots of people making ketchup, and just about every one says at the end of the day, it never tastes as good as store bought. Ketchup is a very complex mixture of many spices, and it relies a lot on the tomato taste, which is highly variable - not nearly as simple as mustard seeds, vinegar and sugar.
