A:
木薯粉 Tapioca starch 160g
中筋面粉 All purpose flour 80g
*You may substitute 160g of Tepung Sagu for Tapioca starch and 80g of Tepung Kanji for All purpose flour
B:
已去头和骨头的 Ikan Selayang, Ikan Tamban or Ikan Kembung (weight without head and bone) Indian Mackerel 500g
冰水 Iced Water 60-100g
盐 Salt 1.5茶匙/tsp
砂糖Sugar 1汤匙tbsp
1-A。材料A的木薯粉和中筋面粉混合均匀备用
Mix tapioca starch + all purpose flour until well combined.
2。把鱼骨、内脏、尾巴、骨头去除、切掉
Remove the head, guts, tail and bones (and skin if you don’t want it) from the fish.
3。把鱼肉 + 盐 + 糖倒入食物料理机,加一点点的水,把鱼肉打成泥状。
Add the water a little by little, mince the fish flesh and blend it with salt + sugar until well combined.
4。把鱼泥倒入大碗内,一点一点的加入材料A的面粉,揉成软面团。
Transfer the fish flesh in to a large bowl. Add the flour mixture a little by little, knead to form a soft dough.
*把鱼打成鱼泥时用的水量(Step 3),会影响Step 4材料A的面粉用量。面粉可能用不完、或者用不够,必须自行调整,只要把面团揉成软面团即可。
* The amount of water used to mince the fish in Step 3, will affect the amount of flour mixture (ingredient A) used in Step 4.
The flour mixture may not be used up, or maybe not enough at Step 4.
You must adjust the amount you needed until a soft dough is formed.
5。桌面撒一些材料A的面粉或者植物油。
Sprinkle some flour mixture (ingredient A) or some cooking oil on the tabletop.
6。取一颗50g的面团,揉成细长条形。
Take a 50g dough and roll to form a strip.
7。重复直到完成。
Continue rolling for the rest of Keropok Lekor.
8。把一锅水大火煮沸。Bring a pot of water to a boil.
9。水煮沸后,小心的把鱼面条倒入锅里,煮至浮起就表示熟了,大约8分钟。
Transfer the Keropok Lekor Dough strips into the pot and cook until they floated, about 8 minutes.
10。把鱼面条捞起、沥干水份。
Remove the boiled Keropok Lekor from the boiling water.
*这个步骤后可以冷冻保存2个月
Keep it in a zipper bag, and store in the freezer for up to 2 months.
11。稍微冷却后,切成小块。
Cut it into smaller pieces.
12。中高火炸至外皮酥脆、金黄色即可。
Fry the Keropok Lekor over medium-high heat until crispy
13。搭配甜辣酱一起吃会更好吃 Serve hot with chili sauce

Your instructions are very clear and helpful. Is it because you were a former crew member? Like you I am a former crew too. This is the first time I come across your site and I shall be looking out for more of your recipes and ideas too. I especially like the fact that you stated that you can store the lekor in the freezer. Tqvm for sharing this recipe. Will definitely try it out 👍
