Ms. Ara, instead of chili powder, can I substitute gochujang? :)
@deliciousLeewithAra
@deliciousLeewithAra 4 жыл бұрын
hi helena 🤗 if gochujang, magiging "thick" ang taste and it may over power the taste of kimchi but- you may add konti lang if u want. feel free to add/remove anyways, thats the fun of home cooking! ♥️

Once fermented properly, it really doesnt become sira because as it turns sour, we use it to make soups, fried rice, etc

Can i use any chili powder? And can i also add gochujang?
@deliciousLeewithAra
@deliciousLeewithAra 3 жыл бұрын
Yes u may add chili powder. Gochujang, preferably very little if you wish too but not too much as it can make the soup thick (taste and texture) as gochujang has a distinctive taste that can somehow overpower the kimchi. If you prefer to add, very little amount only is suggested :)

@@deliciousLeewithAra thank you so much for replying! i actually just made kimchi jjigae using your recipe but added gochujang and no patis ‘cause im currently having allergies now. I couldnt get the taste that i want. It’s kinda bland. Im afraid it might get too salty if i added more salt. So i just used knorr pork cubes if you’re familiar with it. And finally it tasted really good! Is there other alternative for pork cubes? As much as possible i dont wanna use MSG.
@deliciousLeewithAra
@deliciousLeewithAra 3 жыл бұрын
Actually the whole taste of jjigae really would depend on kimchi :) You can also try to make broth as the soup base instead of rice water or water; using the ingredient that you prefer (chicken bones for chicken broth or so on)
@deliciousLeewithAra
@deliciousLeewithAra 3 жыл бұрын
Another tip is, jjigae tastes better as u cook longer- the flavor gets richer and richer. If u find it too bland at first, try to make in big batch and boil and boil and im sure u will appreciate it more the next day (just like adobo- how it tastes richer on the next day 😉)
@holie12
@holie12 3 жыл бұрын
@@deliciousLeewithAra wow! I really appreciate your replies! One last question, is it necessary that the kimchi should not be freshly fermented and should taste sour? Im afraid the jjigae would taste too sour. Ive tried kimchi jjigae in korean restos here in manila but it the level of sourness is just right with its saltiness and spiciness. Disclaimer : i really do not cook. I suddenly just craved for kimchi jjigae because of kdrame hihi

tofu now has a nationality. Use firm tofu instead of "korean tofu" korean tofu tends to break easily. :D
@deliciousLeewithAra
@deliciousLeewithAra 2 жыл бұрын
There are different types of Tofu, there are soft ones to something thats firmer- or whatever u call it. I would suggest if you could use a korean branded tofu
