EASY One Pot Chicken and Rice
Ingredients
5 bone in chicken thighs
2 tablespoons olive oil
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon chicken bouillon
1 teaspoon salt
1 teaspoon old bay
1/2 tablespoon paprika
1 teaspoon ground black pepper
1 teaspoon thyme 1 teaspoon parsley
1 small onion
1 small chopped bell peppers (red and green)
2 cup Jasmine rice
1/2 cup coconut milk
2 cup chicken broth note** (1 1/2 cup for les mushy rice)
1 tsp creole seasoning
1/2 tsp ground black pepper
salt to taste
Bake on 375 for 40 minutes

Just made this for my boyfriend and I. He’s part of the culture. I’m not. I’m Italian but I have been trying to explore and cook him some food he grew up with and it was so simple and smells so good! Can not wait to take it out of the oven and eat it up!

Made this for dinner last Sunday. Everyone loved it! Easy to make, tasty, and made me look like a professional. Will become one of my go to meals when I don't have a lot of time. Did not have any coconut milk and used better than bouillon. Still delicious!

Made this tonight. I had everything on hand except jasmine rice so I used basmati rice. I was scared that it wouldn’t turn out right but it cooked perfectly! I also decided last minute to go ahead and use the coconut milk I wasn’t going to because my son can be picky but I said to myself “I always cook what he likes, tonight it’s about me!” Lol .. I’m so glad I did because it taste so good and my son loved the rice!

i made this last night for dinner and everyone loved it!! Even the picky eaters. The only thing i didn't readily have was spinach so I omitted it. Still turned out amazing and I cant wait to eat the leftovers!! Thank you!!

Just made this for dinner without coconut milk BUT WILL DEFINITELY BE TRYING IT WITH IT! my daughter even ate the chicken and asked for more because it was so good! My kid never eats meat so saying she wanted MORE is saying a lot about this meal . I also didn't have a cast iron. I just transfered everything into a baking dish and put the chicken on top and covered with tin foil and pretty sure it came out just as good.
