For tips on baking and working with the dough, check out this video: • Pie Crust Tips: How to...
2 1/2 Cups All-Purpose Flour
1 tsp Sugar
1 tsp Salt
1 Cup Butter, Cold & Cubed
1/2 Cup Cold Water (more if needed)
Put dry ingredients into food processor and mix. Add butter and mix until the butter is mostly combined but some larger lumps still remain. Slowly add your water a tablespoon at a time until consistency of your dough looks like cottage cheese. Turn out onto a clean countertop and shape into 2 round discs.
Wrap in plastic wrap and chill for 30 minutes.
After chilled, roll out on lightly floured surface. Place into your pie plate and dock the dough before baking.
insert your desired filling and bake accordingly
Bake at 425 degrees until desired crispness is achieved.

How do you roll it out without the bottom crust being too dense and thick? What temp do you use for a cream base pie?

Yes, exactly what I’ve needed. I’m older now and kneading anything is so painful for my hands. Thank you for sharing this recipe & process. I just made my husbands favorite, Dutch apple crumble! I put half the dough in the freezer for next time. This is a wonderful crust! Blessings🌷

Depends on what type of pie you want to make...I just made this and it was perfect. I made an apple pie using the Grandma Ople recipe and used the baking time based on that recipe.

This is a great pie crusts tutorial 👍I was raised by a pie making Mother, so I’ve been baking pies 🥧 my whole life. I have used a dough hook with my kitchen aide mixer for years now. It’s pretty much the same idea as yours, but instead of a food processor, I use a mixer. Works great 👍You can check out my latest flaky apricot pie I recently did. Great job 😊

What temperature and time do you recommend both for apple pie and for blind baking?
@foodandgladness
@foodandgladness 2 ай бұрын
You want to use a fairly high heat for blind baking, 425 F is what I use. For apple pie start your oven out at 400 F, and after 25 minutes bring it down to 375 F to avoid over browning.

Hi Tina! I didn't post the recipe for the pie in the photo because it was a new recipe I was trying out and I was not a fan of the filling once it was done. Baking with 2 crusts is actually easier than it seems - you just need a yummy filling to go inside!

A couple questions..I'll be making several..(maybe 6) small 6in pumpkin chiffon pies. The crust needs to be baked, but not the contents. Any help for amounts, times..etc, would really be appreciated. 😊 Also, can you write the instructions in your text? I'm a pain..sorry lol
@foodandgladness
@foodandgladness Жыл бұрын
Hi 👋 you'll probably want to make up about twice the recipe I used to get 6 small pie crusts. This might leave you with a little extra crust, but when is that really a problem? Since you'll be baking them before filling them, just make sure to poke holes in the sides and bottom with a fork before baking. You will want to start the baking process with some weight in the crust - a layer of parchment paper and some rice work great. Bake at about 425 degrees for 8 minutes, then remove the parchment and rice and bake again. What them carefully, since they are small, but my guess is it will take about 15 minutes more to get a nicely golden brown crust. Cool it completely before filling so your chiffon doesn't weep! I hope they turn out lovely for you 💜

No idea HOW you baked this? Was it blind baked? We need to know. Many of us bake cream pies.
@foodandgladness
@foodandgladness Жыл бұрын
This crust can be blind baked, par-baked or baked with the filling (as was in the photo). I have used it in multiple applications and it does well in all. Just bake at 350 degrees until it's reached your desired crispness!

@@foodandgladness How many times in the oven? 350 sounds great. I'm guessing the longer it's in the oven the more crunchy?

How do you roll out the dough without that bottom crust looking too condensed, thick and heavy? For me the outside crust is excellent but the bottom crust gets heavy doughy like.

@DianaLynn1961 the processor I have now is a Hamilton Beach. It's a great starter one as it's pretty affordable and works well for most things. If you have a little higher budget, though, I would definitely check out Cuisinart or Kitchenaid ones!
