Today's video features a lemon pound cake filled with the aroma of lemons!
As summer approaches, I find myself craving lemon-based baked goods.
This cake is moister than your typical pound cake, so it's sure to be a hit with everyone.
The subtle sourness of the lemon juice is the key highlight.

Oven - Preheat to 170°C (338°F) for 15 minutes, then bake at 170°C (338°F) for 40 minutes.
Air fryer - Preheat for 5 minutes then bake at 150°C (302°F) for 35 minutes.
[ Ingredients ]
(pound cake mold - diameter 15.5cm, height 6.5cm)
Butter: 100g
Eggs: 2 (100g)
A pinch of salt (1g)
Sugar: 2/3 cup (100g)
Cake flour: 1 cup (100g)
Baking powder: 2/3 teaspoon (3g)
Lemon juice: 2 tablespoons (20g)
Lemon zest: from 1 lemon (3g)
[ Lemon Icing ]
Powdered sugar: 2/3 cup (60g)
Lemon juice: 1 tablespoon (12g)
Sugar cannot be substituted with another sweetener.
Cake flour can be substituted with all-purpose flour.
Baking powder cannot be substituted with another ingredient.
*Storage *
Room temperature: 3-4 days
For long-term storage, freeze for up to 30 days.
Do not refrigerate (it hardens the texture).

*Baking Tips *
Make sure to use butter and eggs at room temperature.
If butter and eggs are cold, they won't mix well and may separate.
A mixer can make the process much easier.
When grating lemon zest, be careful not to include the white part as it is bitter.
Lemon zest should be used the same day for the best aroma.
Always wash lemons thoroughly before use.
Let the cake cool in the mold for about 5 minutes after baking to avoid breaking.
Baking too long, even just 1-2 minutes, can reduce moistness, so watch the baking time closely.
If you ice the cake while it's still warm, the icing will melt and drip unattractively.
For best results, seal the pound cake and let it rest for a day before enjoying it at its moistest and tastiest.
