Easy Ropa Vieja in the Slow Cooker

In this video we are going to cook up Ropa Viejo in the slow cooker.
Ropa vieja is a hearty, yet easy dish with beef cooked in tomato-based liquid with onions, peppers and olives.
It’s Cuba’s national dish, and means “old clothes” in Spanish, but don’t worry it’s only because it may resemble a pile of old clothes, and nothing to do with the taste.
To make it we will throw the ingredients in the slow cooker in the morning and feast on this for dinner using the ingredients located below.
Prepare peppers and onions by cutting into slices or chunks. Set aside.
Mix all other ingredients together and set aside.
Beef - Brown it or not, but browning adds more depth to the flavor.
Add beef to bottom of slow cooker.
Add other ingredients. And mix it up to make sure veggies have the liquid on them.
Cover and cook on low for 6-7 hours or 4 hours if on high. I think low on 6+ hours allows flavors to develop more.
When that finishes, remove lid and mix together with a pair of tongs. Dig up the meat and shred it with two forks, though it should be tender enough that the tongs can shred them.
Serve this over some rice and you’re set. No rice? Throw in a bowl like a stew.
Some crackers or bread could be good with this.
Dish is traditionally served with rice, black beans and fried plantains, but is great on its own, as a beef stew with some crackers.

INGREDIENTS LIST:
* 1 large Onions cut to chunks (that’s my preference as they hold shape even after slow cooking
* 2-3 Bell peppers cut long thin
* Flank steak (or any cheap meat that requires long slow cooking. I used brisket for this video)
* 1 can crushed or diced tomatoes
* 2 tablespoons tomato paste
* Splash/2 tablespoons of apple cider vinegar
* Half cup olives
* Cumin 1 tablespoon
* Beef stock 1 cup - USE CLIP from ITALIAN BEEF
* 2 cloves of garlic ( I just used pressed garlic but however way you add them is fine)
* Salt and pepper (2 tablespoons
* each)
* Turmeric (1 tablespoon)
* Oregano (1 tablespoon)
* Cilantro a few sprigs (optional)
SERVE WITH (not part of this recipe):
Rice (white or whatever)
Back beans
Fried plantains
