Easy Small Batch French Bread Recipe (one small loaf)

This small batch french bread is crusty on the outside and soft on the inside. The recipe makes one small loaf that is the perfect amount for 2-4 people.

Ingredients:
1/4 cup war water
1 tsp active dry yeast
1/2 tsp salt
1/2 tsp sugar
2 1/4 cups all purpose flour
1/2 up warm water (plus 1 Tbsp if needed)
olive oil
coarse salt
Directions:
Combine 1/4 cup warm water (105-115 degrees F) with yeast and sugar in a bowl. Mix to combine and allow to sit for 1 minutes until foamy and bubbly.
In a stand mixer, combine flour, salt and 1/2 cup warm water. Pour in yeast mixture.
Mix to combine and knead for about 4-5 minutes. Dough should. be smooth and pull away from the sides of the bowl. Dough will be slightly sticky or tacky. Add more flour or water if needed.
Place dough into a bowl coated with olive oil. Cover with a towel and let rise for 15-20 minutes, should about double in size.
Place dough on a lightly floured surface and roll out into a 6 x 9 inch rectangle with a rolling pin.
Roll dough up from the long side, tuck ends under the loaf and place on a parchment llined baking sheet.
Cover and let rise for 15 minutes.
Preheat oven to 400 degrees F
After dough has risen, use a sharp knife to cut three diagonal slits 1/4 inch deep into the bread. Brush lightly with olive oil and sprinkle with coarse if desired.
Bake for 18-20 minutes or until bread is golden brown.
Place on a rack to cool.

Thank you so much for sharing this recipe. It was so fast and easy to make. I mixed by hand, don't have a stand mixer and you really don't need one. So far one the best tasting breads I have made. Thanks again, going to try some other "small Batch" recipes.

This is so great! Thank you so much for making tiny batches of things and posting the recipes. There is 2 and a half in my family and most recipes I have to figure out how to split myself. This makes it so much easier I think the French bread recipe I have watched every time I make it. Feels like my moms walking me though it. Thanks again! Really appreciate your hard work!

thank you for this recipe... i use this recipe just for 2 of us ... and i can get 2 meal servings each of us .... its my go to recipe since i found it... mine will rise in my garage since i live in fla it rises for 20 mins ! by that time i have oven preheated and ready to go ... i also use a pizza stone preheating in oven ... and i put the dough log onto a piece of parchment and place on stone in oven ... bake ... i bring it out and brush w/melted butter to make the crust soft... let it set for couple mins before serving ... i love this recipe

I tried this recipe and it came out great! The bread did not survive the end of day! :) Given the short rise times I will try this with instant yeast--it saves time by eliminating the proofing step. King Arthur Flour recommends instant yeast for french bread.

....It's just me, and I really don't mind eating the same food 2-3 days in a row. I wanted a "small" batch easy recipe cause I don't do so well baking. I don't like wasting food either and found myself feeding the birds leftover stale bread or I overeat. Thanks for your channel and addressing empty nesters & single people.

I have made your French bread by hand and it is easy and fantastic. My family loves it . I used flure de sole salt on the top .

Going through covid at the moment. Bored to the core and wanted something to do because I'm starting to feel a little better. Not going to have anyone over for Christmas, but it's beginning to at least smell like it's Christmas. Thanks for the Small recipe ideas.

How long can you leave it to rise? For example can I make it early in the day, move over to cookie sheet after rising first time after an hour and then let it rise a second time for an hour? If so would I use olive oil on top as soon as I put on cookie sheet? Thank you!

That is probably too long of a rise time for this recipe.

Hi! I have a question my loaf tasted pretty yeasty or like of alcohol a little bit :/ I’m not sure what I did wrong ! Did I put it in a too hot environment ? I heat up my oven to the lowest temperature then turned it off and placed it in there. It’s my first time baking bread so not sure what happened ! :( still tastes really good !

So strange, I did a little research and the only thing I could find was this: "Storing your bread in a warm, moist environment can encourage the growth of yeasts and bacteria that produce alcohol. This can result in an alcoholic smell and taste"

You could freeze it after it is baked. Should taste fine.

I keep my expired yeast in freezer. Before you toss it do the 1/4 water proofing as Leigh describes.

I didn’t get good results. I would have preferred a crispier crust. The video mentions 2 1/2 c flour while the written recipe says 2 1/4 c.

Sorry you weren't happy with the results. Always go by the written recipe as sometimes while filming I say the wrong thing.

Yes, sorry about that. The original full size recipe had an egg in it but when I converted it to small batch form I left the egg out and it worked great. I forgot to delete the egg from the recipe. Will go in and correct the recipe on the blog now - thanks for letting me know

@@LeighAnneWilkes Thanks for the quick reply! I've been making bread as a hobby for the past few years and have often wondered how to scale down a multi-loaf recipe that included one egg. A gadget that could separate one egg into halves would sell millions! Thanks for your recipe. I will try it tomorrow. Often I want to make bread for supper but realize there aren't enough hours to do so. This will be perfect!
