Summertime is the best time of year to eat vegetables since they are so flavourful, nutritious, and delicious! My favourite way to enjoy them is in this Easy Summer Caponata 🍆🇮🇹
Caponata is a Sicilian dish that is quite similar to French ratatouille. It is made with eggplant, peppers, celery, olives, tomatoes as well as briny olives and capers. These vegetables are slowly cooked together and served at room temperature or chilled with basil and pine nuts. A great addition that I like to add is some canned tuna in olive oil. This adds lots of flavour and a bit of protein! 🍆🇮🇹
