Do you have lots of leftover eggwhites? Make Lengua de Gato - translated to "Cat's tongue", are buttery, crispy and melt in your mouth cookies which are so easy to make and so yummy as well. They're also called as Filipino butter cookies and favorite take home treats to give away as gifts to family and friends-
✅ RECIPE:
100 grams ( 1/2 cup ) softened unsalted butter
75 grams ( 1/2 cup ) powdered sugar, sifted
80 grams ( 2 large) eggwhites
125 grams ( 1/2 cup + 1/3 cup ) cake flour, sifted
1/8 teaspoon salt
YIELD: 32 - 34 pieces ( 3 inches in length )
BAKING TIME: 15 - 18 minutes
BAKING TEMPERATURE: 180'C
OVEN USED : Convection oven, top and bottom heat
BAKING PAN USED: Cookie sheet with silicon oven proof liner
◾You may use any brand of butter but a good quality butter always works best in any baked goods
especially in this recipe
◾You may also use a smaller round piping tip if you want thinner cookies.
◾It's very important to cool the cookies completely before storing them in airtight containers to prevent them from getting soft
◾These cookies can also be flavored like chocolate, matcha or ube
