Hello my friends, here are some Easy Vacation Meals for your next family vacation!
These meals are perfect for airbnb's, vacation rentals, and hotels with full kitchens.
Going out to eat on vacation can be very expensive, especially if you have a larger family. Even if you're a family of 3 or 4, eating out 3 meals a day can be costly. But just because food prices are going up, doesn't mean I should stop going on vacations with my family.
By utilizing your hotel or airbnb kitchen, you could save hundreds of dollars by bringing a large cooler full of food and make your own meals.
It doesn't mean we don't visit local dining establishments. We still visit a few during our vacations because not only do we want to support local restaurants, but we also want to feel like we're on vacation by dining out! Plus it gives me a night off from cooking and the night off for hubby to not clean haha!
I like to bring a lot of food that's already in our fridge, pantry and freezer because it's just going to be sitting at home, potentially going bad. Especially the fruits and vegetables, so why not bring it with you!
Breakfast is one of the easiest meals that you can make in vacation rental kitchen, and it doesn't have to be fancy! Bacon, eggs, toast, milk, fruit, and coffee is a perfectly well rounded breakfast that can cost maybe $25 for 2 breakfasts but at a restaurant for us, could be anywhere from $50-80 for one breakfast out for our family of 5! That's pretty pricey if you ask me.
Lunches can be simple but taste even BETTER if you take your meals outside into nature. We generally try to take vacations where we can picnic outdoors and enjoy the fresh air and beautiful surroundings, creating memorable experiences with my kids and husband. Sandwiches, fresh fruit, charcuterie meats & cheese, carrots, cucumbers, and cookies are great options for an easy lunch.
Since our vacation was slightly shorter, I only made one dinner, but boy was it delicious and super easy to make. I made creamy chicken enchiladas at home the day before so that all I had to do at the airbnb, was to cook it in the oven! I also made a Mexican rice packet with all of the seasonings in the packet so I didn't need to bring all my seasonings with me from home.

Creamy Chicken Enchiladas
-2 chicken breasts, shredded
-1 block cream cheese
-1/2 cup sour cream
-1 teaspoon each : cumin, chili powder, oregano, paprika, onion powder, garlic powder
-1 cup frozen corn (optional)
-2 cups shredded cheese
-10 to 12 flour tortillas
-2 to 3 cups enchilada sauce
-green onions
To your shredded chicken, add cream cheese, sour cream, seasonings, corn, and 1 cup of shredded cheese and mix together. Warm up your flour tortillas and add some chicken mixture to the end of a tortilla and roll up. Add your rolled enchiladas to a baking dish that has a little bit of enchilada sauce on the bottom to ensure enchiladas don't stick to the pan. Pour the rest of the enchilada sauce over the enchiladas, add the remaining cheese and top with diced green onions. Bake in a 350 degree oven for 25 minutes.
