Easy Vegan Flour Free Sugar Free Cornbread Recipe
This is a traditional recipe for cornbread and it could not be easier. With just 7 ingredients and about 30 minutes, you'll be eating some tasty sugar free cornbread!
Ingredients
1 "Neat" egg
1.5 cups soy milk
1 Tbsp apple cider vinegar
1 Tbsp grapeseed oil (or other flavorless high temp oil)
2 cups corn meal
1 tsp baking powder
1/2 tsp salt
Bake for 20 minutes in a 450F degree oven

@@talitahitching6619 yes, the amount of oil per serving is minimal, and to keep things simple and not drive myself crazy trying to calculate individual items, I just count it as a grain.

One cup of unsweetened applesauce subs for egg. Because traditional cornbread calls for (wheat) flour, I used a 1/2 cup of almond flour with 1.5 cup of corn meal. I’ve made it with all corn meal before and it was good. Used coconut oil for the oil. Recipe calls for 1 tsp soda and 2 powder. Also squirted some honey to add sweetness but forgot once and it was fine. Today I found many recipes for vegan cornbread so probably can’t mess up as long as you get close to the recipe, use enough corn meal and not make it too wet or too dry.

Thanks for this recipe! I wanted a flour-free version and this was perfect. I used 2 chia eggs in place of the Neat Egg (I had a big bag of chia seeds), and it worked very well. I made it on an iron skillet. It's crispy on the outside, soft in the inside, and yet overall firm enough and doesn't break or fall apart.

@@libbymendes4141 I don't remember exactly, but it must be soy milk. That's the only vegan milk I use most of the time.

I loved your flour free vegan corn bread. You can also make your vegan egg with just 4 parts water for one part of chia seeds. Leave them soaking for 10 minutes and then pass the mix through a strainer.

Thank you so much for this recipe..I put half cup flour and 1 and a half cup cornmeal because I notice whenever i eat cornmeal my throat burns, and i use flaxseed since i ran out of chia..I just had a slice n i really enjoyed it..I will make it again and again and i will try it with coconut milk n use some corn next time also.

If you’re doing Bright Lines Eating plan you cannot eat flour.

Corn meal is basically polenta, so I would use the Bright Line Eating suggested serving size for polenta of 4oz. Enjoy!

okay, I am in middle of it all with my ovn heating but I am using my loaf pan. I am already done with making my buttermilk but I used real milk because I have no soy right now and I did use flax & water cause that was what I had and I m sure that was okay to do too, cause I used the flax buttermilk with whole milk before and that all was okay. You are right that it was very ease and that is what I wanted - easy because I make my faily flat breads too - so this is just another variety option - ty. ok I will finish this off and let you know ...

Hi Pamela! Considering I don’t find avocado oil flavorless, and you recommend using a flavorless oil, would you find it less than ideal for your cornbread recipe? Thank you.

If you find the taste very strong then you can replace with any other oil of your choice and it shouldn't affect the recipe.

It wouldn't quite have the same texture. Corn meal isn't ground as fine as flour is, so it may be more fluffy like a cake. I say try it and see though! Nothing wrong with experimenting. That's how new recipes are made. 😁

Today, I plan on trying this with a small red potato blended with some frozen corn and broccoli. I will put that into the vitamix and add to recipe in lieu of the plant milk, due to sensitivities to plant milk. I will use water and no egg product at all. I like ACV so will also use some of that in the corn/potato milk. I'll let you know how it comes out!

I made the mistake of adding too much oil and not enough liquid with the potato/corn milk. They held together, despite the lack of egg, but due to my mistake, they tasted too oily and gritty at the same time. I have a plan for the next time, and will have to finish the muffins I made this time, first. I had to bake them for 25 minutes instead of 20 minutes, even though they were just muffins rather than the 8x8 cake pan that you recommended in the video. I'll post next time I make them and let you know how they came out.

I tried again, and it came out great! I didn't use any type of egg. I just skipped that. I made my own potato milk and blended in some broccoli as well. Otherwise, I followed the recipe. I just ate two slices of the bread. Yum! Thank you for the great recipe.

@Trump's Hair Piece Is Missing I have an update. Instead of potato, I am using leftover polenta and 2 cups of water. It comes out much more moist and fluffy this way. No sugar, no egg, no oil, no gluten. And it is delicious! I top it with corn butter, which is just cooked corn blended with water and salt in the blender. It's quite good for what it is.

Silly question, but since I'm not a vegetarian, can I use a real egg? Will that somehow affect the protein/veggie weights? Just getting ready to start the BLE program...

You can totally sub in an egg if you like. To keep things simple I count this as a grain only and use 4oz as 1 grain serving. Welcome to the BLE family!

@@suncrystalLove yeah, since the recipe makes so much and it's only 1 egg (and some milk), it's easier to just count it as grain only. Too much fuss trying to do the math to figure out what small percentage would be protein. But, that's what gives me peace, and I know others who would not have peace unless they figured out exactly what percentage was grain vs protein. So, do whatever gives you peace around your food and stops the mind chatter as they say in BLE.

I'm not sure... you can definitely try it and see if it works. If the vinegar curdles almond milk and makes it thick like it does to soy milk, then it should work. If you try it, let me know how it turns out!

Anyone try the same ingredient of the corn meal at bread machine? I am having ready hard time to figure out make bread for my family while considering my son who have a lot of allergy: like eggs, peanuts and wheat. If anyone can help me to make a bread in bread machine it will be amazing and wonderfully great!!!

This recipe would not work in a bread machine since it does not require kneading. If you mix it too much it becomes rock hard. This bread recipe is much simpler than one for a bread machine. Give it a try!

It is! The only reason it wouldn't be compliant is if it were used in combination with flour (in baked goods). Corn meal and polenta are the same thing and polenta is used as a grain for BLE.

I'm not entirely sure since I haven't tested it, but for the egg substitute I used the equivalent of 1 egg.

@@Wikipamela I ended up using two eggs, it looked great but was very dry. I think I over baked it. Should it be moist even though there isn’t any oil? I also thought about adding some applesauce instead of oil but wasn’t sure how much

@@scarlettwinters5642 yeah, it may have been cooked too long. You could try both the applesauce and cooking it for a shorter time. Baking is a science, so it takes some experimentation.
