After my partner Katrina made artichokes this way I was hooked and set out to specifically grow baby artichokes. I still love me the big boys dipped in some nice seasoned butter or mayo but these are an elevated experience. Cook up a nice fettuccini piccata or a rich creamy alfredo topped with these whole artichokes and thank me later!

1 clove of garlic. That clove is half the head 🤣

As you’re cleaning and cutting them toss them in a bowl with water and lemon juice, citric acid or vinegar. It should keep them from oxidizing.

Since I pan frying them I didn't want to introduce any water at this point but that does work!

I usually key a half of a lemon on hand and rub it on the fresh cut. It doesn’t add much liquid that way and it’ll prevent that browning

When I was no older than 10, my aunt, who lived in California, came to visit us lowlifes in Missouri, and she brought with her Fresh Artichoke. Of course, I had never tried it before, and from what I remember, we steamed the whole head, and ate the leaves, too!

I had the best rice at a Thanksgiving dinner that had artichoke in it along with a salad of baby spinach, walnuts, red onion slices and raspberry vinaigrette dressing.

If you don't want oxidation, rub a lemon slice on the cuts. Since you're frying them, though, I don't think the oxidation matters. Thanks for the recipe! I need to find baby artichokes now. 😊

I eat the outer leaves too. Pressure cooking helps.

Hey Jacques! I recently saw some people talking about sterilizing their potting mixes with steam. I haven't seen anyone on KZfaq do this and I would love to know your thoughts on it!

I personally would only do that if I had indoor plants or if your trying to certain microbes and fungi but you would need to add those with some kind of additive like micorizal powder

I've heard about a trick to prevent oxidation is to just dip the choke in lemon juice.

But Jacques you didn't eat it "whole" at all, you threw most of it away! We grew up cooking the entire head, then peeling each petal off one by one and sucking the flesh off the bottom of each (leaving only the pointy tip), before eating the heart at the centre.

That is how I have usually ate it but in this case you are eating the entire petal, except the tips. So instead of having a bowl of scraped petals you actually eat the entire petal. When you get these smaller artichokes it really isn't worth eating that way anyways.

Where do you source your plants first before growing them? Do you buy organic seeds or a mature plant already? If you start growing from a market fruit or plant, will it carry the same characteristics like if its a gmo plant or something? Im so new. Thanks

Actually, when they die back slowly, leave the leaves on to let it continue to gather energy. What I noticed is next spring baby artichokes start off the old stack and some off root sideshoots😊

@@ginblossom70 yeah no problem 🤍 my mother in law was wondering what witchery I was performing to keep cut bananas and avocados from oxidizing and I just held up my knife lol. My guacamole never turns brown even uncovered for hours and overnight. Just be gentle on the knife when washing and storing because they can chip easier than your traditional knives. Well worth the care though ✌️

I eat the petal meats directly this way! Especially for smaller artichokes that aren't worth the bother for eating that way.

Not intending to bait! In my mind this is eating the artichoke whole as you are eating all the petals and the full structure. The tips have very little in them and potentially spikes but everything else is being consumed.

​@@zoewhite7705 I always ate (or scraped the petals) the same way too. I never had fresh artichokes, only canned but yummy still. I would add them to garnish a salad.

​@@jacquesinthegarden It must have been in how it was edited then, it looked as though you discarded all the petals, and then cut off and discarded a large part of the heart also, and only cooked the very small part that was left after that.
