Eat Supper With Us - Beef Stew, Cornbread & Slaw

We enjoyed supper together, but we sure did miss Mom!
Beef Stew Recipe:
- Beef Stew meat or Chuck steak or roast
- Carrots, Potatoes, Onions
- Tomato Paste
- Broth (Chicken or Beef)
- Salt/Pepper/Parsley
- Oil/Butter
Turn Instant pot on to sauté function and add oil/butter
Brown beef on Sauté function in instant pot
Hit cancel button
Add veggies, spices, tomato paste, broth
Add more butter if desired
High pressure 35 mins, let naturally release for 10 mins then release manually
Slaw Recipe:
- Half head of cabbage
- 1 carrot
- 1.5 TBS Lemon Juice
- 2 tsp Apple Cider Vinegar
- Salt/Pepper to taste
- Sugar - optional
Chop slaw/carrot in food processor
Add all other ingredients, mix and taste

And not eating in front of the television! I never do that or eating in front of my PC. I always sit even if I am alone. I plate up properly with napkins and full set of cutlery. This is what makes a decent meal :)

I'm old country. What I do is break up a piece of buttered cornbread in a bowl and spoon my stew juice and all over the top. Pintos the same way. Can't beat it. I'm hungry again. 😂❤

What a coincidence, I made slow cooker pot roast today with beef sirloin, onions, peppers, carrots, potatoes, and gravy. Also had cornbread and my home grown half runner beans today. Happy husband. So glad Granny is getting better. ❤ 🙏

Everything looks so delicious! I make stew the same way except I toss the meat in seasoned flour before I brown it so it makes the sauce a little thicker. And I add celery. I love seeing how people make the same dish, it's always a little different but always made with love!

I do the same and also add Celery. I also make a slurry to thicken the sauce so it's not so watery. A bit of cold water mixed with corn starch and, add it in at the end.

The good thing about using the Instant Pot (or any pressure cooker) is you only need 1 cup liquid for it to cook. When you add enough to cover the food it turns out more like soup. It sounds like a good supper and your family enjoyed it--that's what's important. Glad to hear Granny is better.

I'm trying this recipe tonight. My husband doesn't like change, and my Instantpot is one. He likes dinner fixed on the top of the stove or the oven. When he saw me preparing the meal in the Instantpot, I told him I got the recipe from your channel. Then he agreed the meal should be okay. 😅

Just wanted to pass some information along. When I used to cook more and peeled potatoes I used to toss the peels in the trash. I saw someone bake them!! They tossed them in oil or something, seasoned them then baked til crisp..homage chips...

I have found in making coleslaw, the longer it sits, the wetter it becomes. That being said, I started using less mayo and it always ends up being enough!! Your meal looks amazing!! ❤❤

I had beef stew over mashed potatoes for supper myself. yours with the slaw and the cornbread looked most delicious though. Im so glad t I hear the good news about granny. All of yall are a big BLESSING. Im sure mom and granny will be home soon.

Hint for cutting onions: cut them on a wet paper towel or keep a wet paper towel close by, and the squirt of the onion juice will attract to the water on the paper towel and not your eyes 😉

Another hack I've found is to keep the cold water tap running in the sink as you cut the onion. And if that isn't enough to keep back the tears, try running the halfed onion under the running water for a second, then finish chopping it. Hope this helps.

If you dredge the beef chunks in flour or corn starch, it'll be more like a stew and less like a soup. But looks amazing.

Scrub those carrots and save the peelings and the peelings and endings from the onions and put them in a freezer bag with any celery bits you have from trimming celery (and maybe a couple more celery ribs) with a couple smashed garlic cloves and make veggie broth to use to cook your soup beans. My grandma used to do that all the time. You can also use the trimmings bag with a chicken carcass to make chicken broth.

I loved watching you cook! Its interesting the little differences people have with common recipes like stew and Cole slaw! I think every region does it a different way. My mother used to add pineapple tidbits when she made cole slaw for birthday parties. A local restaurant serves jambalaya with cornbread, and one of the optional sides is garlic cole slaw made with apple cider vinegar.

Something I learned a long time ago. Stand off to the side when cutting onions. We tend to stand right over them when chopping them and the juice goes right up into our eyes. Standing to the side helps prevent that some!
