重庆火锅和成都火锅有个区别，虽然都辣，但牛油的用量不一样(成都明显少些)。一般重庆人，特别是老牌重庆人，是不会作什么原汤油碟(加火锅汤进油碟里面)，是因为1.它会使解辣/预防上火的香油完全失去作用，2.油碟会很容易凝固。像我吃火锅，到了中场，就要换油碟，不能让香油的味道消失得无影无踪。
