The start of the 2022 January Pantry Challenge. You can learn more about the challenge by viewing this video: • Meal Planning, Food Sh... Basically, the challenge is to eat only from your pantry for the entire month. We're off to a great start so far, and many of the pre-made meals and our style of dump & go canner fits really well into this challenge. Click on the hashtag near the title of this video, to view videos from other participants.
What are we running low on at this point, mostly just cheese. So we'll probably buy some at some point during the month. Milk we're good on since we have shelf-stable milk already down in our pantry thanks for a great tip from you guys!

I do it that way in a mini crockpot. Only takes 90 - 120 minutes for 2 servings. I mix half n half ratio of rolled oats and the fine oatrageous oats. Makes it creamy. I love it. I make it at night and stir once halfway through. Play with it, it is definitely a keeper.

Caramelized cabbage is my favorite! Pickled is OK but fresh is great. My mom used to take the core and ribs off the leaves, chop them small with onions and butter, steam for 5 or so minutes and then let them caramelize. No waste and tastes great

Everything looked delicious. It's always inspiring to see what other people eat as it's easy to get stuck making the same few dishes over and over. I'm also attempting the challenge but didn't prepare so will be picking up dairy products. I did loads of freezer meals toward the end of last year, probably way more than a months worth for the two of us and have a chest freezer full of things out the garden and meat I've purchased over the last 6 months. It'll be good to get through some of it. I made homemade pizza dough this week and will be making my own bread for the month which I don't usually find the energy to do so it's nice to have that push into making the effort :)

You inspired me to check my pantry. Even though I don't have ready-made meals canned/preserved, (I mean, I do have some stuff preserved like spaghetti sauce) but anyway, this inspired me to check my pantry for stuff thsts been sitting around. I found steel cut oats, coconut and cocoa powder. I made chocolate coconut oatmeal for breakfast tomorrow. I added a bit of honey. Its a good way to use up stuff, so thank you for the inspiration!

I didn't have food preservation knowledge enough to fill a long term pantry. I'm learning now. I hope I'll be able to join the three rivers challenge next year. Prepping, food wise, is to have a pantry at the end of the growing season that gives confidence that you will have food to eat healthy till the end of the next growing season. Wither meal time comes with a big prep time or not, is ones individual preference.

I just told my husband that I'm trying to avoid the store after spending money on Christmas goodies, then there's no "You're not the boss of me!" component. If he comes home with something, then it is what it is! My littles get milk during this time, too, and my beef came last week, but that doesn't count as it was scheduled with the farmer. 🙂 Enjoy the yummy food!

I’m so glad you decided to join this - you have the best ideas. My pantry challenge so far has involved using up all the weird ingredients in my pantry so it looks a bit different - When I get to the part where I’m starting to use my primarily jarred food though I am totally going to be using some of these ideas - We loved your white bean chicken chilli you did awhile ago and make that one all the time. I’ve never attempted pot pie before - I think I’m going to try that with some of my leftover canned turkey ❤️. Thankyou!

I’m really enjoying this challenge. I didn’t prep going in but it’s day 10 and so far so good. I grow a garden, can, freeze and freeze dry. Would love to try the Korean beef bowls they sound so delicious. The only thing that I don’t have enough of is greens. I should start some sprouts🤔. I budgeted $20 for the month of January, super frugal but if necessary I could stay in budget. Haven’t needed to grocery shop yet. Thank you for the meal inspiration.
