They look on the dry side. They do something similar to this in southern Thailand, only they par boil the birds first and then bbq over a charcoal or a wood flame and they are terrific and not dry.

It is the best, Almazan, type kitchen. He boils only two for the sauce? Even though you can add and deep into any kind of sauce. I love this type of cooking. It is rare. Not allowed in some cities.

Is this any different than smoking a spatchcoked chicken on a kamado then crisping it over a flame? The dutch oven is more of a cheat to me, likeif you have a line forming and not enough grillspace.

Eh, I don't believe him. You go to any Mexican grocery store in California and they're making the pollo asado in the parking lot that in turn is sold in the deli inside. From watching the technique in the video, there's no way that that one tastes significantly different. Plus, I think I paid like $9 for the pollo asado the last time i got it.
