Chili dip or seafood sauce:
10 fresh chilies
2 cloves of garlic
1 tbsp. of coriander
2 tbsps. of fish sauce
1 tsp. of sugar
2 tbsp. of lime or lemon juice
1 tbsp. of Sriracha
Blend all the ingredients together in a food processor.
Today we have deep sea oysters, so they're bigger than the ones we usually see in Danish beaches. I made my usual spicy seafood sauce with pla ra (fermented fish sauce) and I also ate them with bitter beans and crispy fried onions. You can also make Hoi Tod [oyster pancakes] with them, but you should use smaller ones.
